THE FINISHING STEP
Two Faces, One Refined Edge
Stropping is what separates a sharp edge from a polished one. The green-compound side refines and strips away the final burr left by the stone. Flip to the smooth vegetable-tanned cowhide and you bring the edge to a 10,000-grit equivalent polish. A 205mm by 65mm working surface gives you room to draw the full length of a chef's knife in a single pass.

WHY STROP
Sharper For Longer, Less Often
A whetstone sets the edge. A strop maintains it. Drawing the blade backwards across the leather realigns and polishes the apex without removing steel, so a few passes after each session keeps the edge keen and pushes the next full sharpening further out. Mounted on an 18mm solid walnut paddle for a stable, flat platform that sits steady on the bench.

HOW TO USE
After The Stone, Before The Cut
Start on the green-compound side to refine the edge straight off the whetstone. Lay the blade flat, then lift the spine to match your edge angle, and draw the knife backwards (spine-leading) along the leather. Five to ten light passes per side. Then move to the smooth cowhide face for the final polish. Always pull away from the edge, never into it. A handful of passes between sharpenings keeps a working knife at its best.
CARE
Keep The Leather Working
Store the strop flat and dry, away from direct heat and damp. Re-charge the compound side as the green dressing wears thin. Leave the smooth cowhide face bare for polishing. Wipe off steel swarf occasionally and the leather will last for years. Covered by Xinzuo Australia's lifetime warranty against manufacturing defects.
FAQs
What is a strop used for?
A strop is the final step in sharpening. It refines and polishes the edge after a whetstone, removing the last microscopic burr and bringing the apex to a mirror finish, without grinding away steel.
Why is it double-sided?
One face is pre-loaded with green refining compound to strip the final burr off a freshly sharpened edge. The other is smooth vegetable-tanned cowhide that polishes to a 10,000-grit equivalent. You work coarse to fine across the two sides.
Does this replace a whetstone?
No. The stone does the actual sharpening; this strop maintains and polishes that edge. Use it after the stone and between sharpenings to keep a knife keen for longer.
How do I strop without damaging the edge?
Match your edge angle, then draw the blade backwards (spine-leading) along the leather, pulling away from the edge. Never push the edge into the leather. Five to ten light passes per side is plenty.
How big is the stropping surface?
The leather working surface is 205mm long by 65mm wide, on a paddle 340mm long overall and 18mm thick. There is room to draw a full chef's knife in one stroke.
What is the leather and handle made of?
Hand-cut, vegetable-tanned cowhide mounted on a solid North American walnut paddle. The whole tool weighs 235g.
When do I re-apply the compound?
Re-charge the green-compound side when the dressing wears thin and stops cutting. Leave the smooth cowhide face bare, as it polishes on its own.
