Set the roast on a board with a juice groove. Drive the fork's two tines into the thickest part of the meat, away from where you are slicing, and hold it firm. Carve against the fork in long, smooth passes rather than sawing. Best paired with a Ji series carving or slicing knife so handle, balance and finish all match across the set. Lift and turn the roast with the fork to reach every face.

Hand wash only, never the dishwasher. The detergent and heat dry out the ebony handle and dull the finish. Wash in warm soapy water, rinse, and towel dry straight away, paying attention to the base of the tines. A light food-safe oil on the wood now and then keeps it from drying out.
