The Uliassi Series: XinZuo x Mauro Uliassi
Most knife ranges are designed in a boardroom. The X03 Uliassi Series carries the name of Mauro Uliassi, the Italian chef whose restaurant holds three Michelin stars, from XinZuo's collaboration with him. It is the same series the brand showcases worldwide, and it is available in Australia from our Queensland warehouse.
Who is Mauro Uliassi?
Mauro Uliassi runs Ristorante Uliassi in Senigallia on Italy's Adriatic coast, one of the small group of restaurants worldwide holding three Michelin stars, the highest rating in cooking. A chef at that level is precise about tools. The X03 series is XinZuo's collaboration with him: a working chef's knife line, not a celebrity sticker on a standard blade.
What makes the X03 different?
- Hammered Damascus blades. The tsuchime hammer finish is not decoration: the hollows reduce drag and help food release from the blade, and each knife's pattern is its own.
- A chef's geometry. The range is built around the shapes working cooks actually reach for: bunka, santoku, nakiri, boning, carving, paring, bread and utility, plus a matching sharpening rod.
- The same steel discipline as the rest of the XinZuo range. Japanese-grade steel cores, hand-forged in Yangjiang, hardened for edge retention, backed by the lifetime warranty.
Which X03 knife should you start with?
If you buy one, make it the 8.5" bunka: the flat profile and pointed tip cover most of what a chef knife and a santoku do between them. Vegetable-heavy cooks should look at the 7.5" nakiri, and the 7.5" santoku is the safest all-rounder to gift. Every knife in the series can be laser engraved with a name or date, which turns a serious tool into a serious present.

Where are Uliassi Series knives made?
XinZuo knives are hand-forged in Yangjiang, China, the city that has made blades for centuries, using Japanese-grade steels. The Uliassi collaboration is about the chef's input on the line, not the country on the label.
How does the X03 compare to the rest of the range?
The X03 sits at the premium end of the XinZuo range alongside the Damascus series. If you prefer a classic polished Damascus look over the hammered finish, start with the Damascus knife sets instead.
