DESCRIPTION
The 7-inch santoku is built for precision: clean push-cuts, fine dicing, and paper-thin slices of vegetables, fish and boneless meat. Its flatter profile and nimble length make it the everyday all-rounder for cooks who love control.
A Genuine Böhler M390 Super-Steel Edge
The blade is forged around an authentic Böhler M390 MICROCLEAN powder-metallurgy super-steel core from Austria, heat-treated there to HRC 60-62 and wrapped in a 145-layer Damascus (316L stainless). M390's renowned edge retention keeps santoku slices crisp and effortless, while its corrosion resistance handles wet, acidic prep with ease.
The Angel's Eye Handle
A Wa-style carbon-fibre and resin "Angel's Eye" handle, steel bolster and mosaic copper-flower inlay give the santoku a light, agile feel. The full tang keeps it perfectly poised for the quick, repetitive cuts this knife is made for.

One knife. Most of the board.
The santoku is the workhorse of the home kitchen, and the Li Series is the premium end of the bench. M390 powder steel sits at the core, jacketed in 145 layers of Damascus cladding. The 7-inch flat profile keeps the edge on the board for push cuts, while the carbon-fibre handle keeps the whole knife light at 183 grams. Confident, technical, built to last.

Why a santoku
Nimble, flat, fast
The santoku earns its keep with a flatter edge than a chef's knife and a shorter 178mm blade. That means more of the edge meets the board on every push cut, less rocking, and tighter control through onions, herbs and boneless cuts. At 183 grams it stays nimble through a long prep session.
- 7 inch / 178mm blade
- Flat-ish profile
- Push-cut geometry
- 183g light
The steel
M390 powder steel, 145-layer Damascus
The core is M390 — a powder-metallurgy stainless prized for edge retention and corrosion resistance. It is clad in 145 layers of 316L stainless Damascus, 72 layers each side, for the rippled pattern and a tough jacket around the hard core. Hardened to 60-62 HRC through vacuum heat treatment and a deep-freeze cycle, then hand-sharpened to 15 degrees per side.

In the hand
Carbon-fibre grip
The handle is black resin carbon fibre — light, sealed against moisture, and balanced to keep the knife agile through repeat cuts. It pairs with the 183-gram blade for a knife that disappears into the work rather than fighting you. Hand wash only and dry immediately to protect the edge and finish.
