7" Nakiri Knife - Li Series (X04)

The Li Series nakiri is built for vegetable prep. A flat 7-inch edge stays in full contact with the board, so every push-cut goes clean through in one motion. The blade is 145-layer M390 Damascus over a 316L stainless cladding, hardened to 60-62 HRC and ground to 15 degrees per side. The tall, square profile gives you knuckle clearance and lets you scoop prep straight off the board.

DESCRIPTION

The 7-inch nakiri is the vegetable specialist — its tall, flat blade makes clean, full-contact push cuts through cabbage, onions and root vegetables, so you slice straight through to the board without rocking or tearing.

A Genuine Böhler M390 Super-Steel Edge

This nakiri is built around an authentic Böhler M390 MICROCLEAN powder-metallurgy super-steel core from Austria, heat-treated there to HRC 60-62 and clad in a 145-layer Damascus (316L stainless). M390's renowned edge retention means consistently crisp cuts across mountains of veg, and its corrosion resistance shrugs off acidic juices.

The Angel's Eye Handle

The Wa-style carbon-fibre and resin "Angel's Eye" handle, steel bolster and mosaic copper-flower inlay keep the tall blade balanced and comfortable. The full tang adds the stability you want for confident, repeated chopping.

LI SERIES // X04

Flat Edge. Full Contact. Clean Push-Cuts.

The nakiri is a vegetable specialist, and the Li Series is the premium build of it. The 7-inch blade runs a straight edge from heel to tip, so it meets the board along its full length. No rocking, no sawing. You push down, the cut finishes, and the tall blade carries the slices for transfer. M390 powder steel under 145 layers of Damascus means the edge holds through a full prep session.

The Right Shape For Vegetables

WHY A NAKIRI

The Right Shape For Vegetables

A flat profile is what separates a nakiri from a chef's knife. The straight edge contacts the board across its full length, so a single downward push severs cleanly without the back-and-forth a curved blade needs. The tall blade keeps your knuckles clear and acts as a scoop for moving prep. For onions, cabbage, carrots and herbs, this is the shape that does it fastest.

M390 Powder Core, 145-Layer Damascus

THE STEEL

M390 Powder Core, 145-Layer Damascus

The core is M390, a powder-metallurgy stainless prized for fine grain and edge retention. It is hardened to 60-62 HRC with vacuum heat treatment and a deep-freeze cycle, then clad in 316L stainless Damascus folded to 145 layers in total. The result is a hard, corrosion-resistant edge wrapped in a tough, flexible jacket. The Damascus pattern is structural, not printed.

Carbon Fibre Grip

IN THE HAND

Carbon Fibre Grip

The handle is black resin carbon fibre, sealed against moisture and stable in a wet kitchen. The spine measures 2mm, kept thin so the tall blade stays nimble through dense vegetables. At 204g the knife has enough mass to drop through a cut on its own weight, balanced for the controlled downward push a nakiri is built around.

The difference

Why this knife

Li Series Nakiri

  • 60-62 HRC, holds an edge through long prep

  • Carbon fibre handle, sealed for wet kitchens
  • 15° per side, ground sharp out of the box

Generic Stainless Nakiri

  • Single mid-grade stainless, no powder core

FAQs

What is a nakiri knife used for?

It is a dedicated vegetable knife. The flat edge makes full contact with the board for clean push-cuts, and the tall blade lets you scoop prep straight off the board.

Why a flat edge instead of a curved one?

A flat edge meets the board along its whole length, so a single push-cut severs cleanly without the rocking or sawing a curved chef's knife needs. It is faster and more accurate for vegetables.

What steel is the blade?

An M390 powder-steel core clad in 145-layer 316L stainless Damascus. M390 is valued for fine grain and edge retention; the stainless cladding resists corrosion.

How hard is the blade?

60-62 HRC, achieved with vacuum heat treatment and a deep-freeze cycle. That keeps a fine, durable edge ground at 15 degrees per side.

Is the Damascus pattern real?

Yes. It comes from folding the 316L stainless cladding into 145 layers around the core. It is structural, not a printed or etched surface finish.

How do I care for it?

Hand wash and dry immediately. Do not put it in the dishwasher. Store it dry and hone the edge regularly to keep the 15-degree bevel sharp.

What is in the box?

The 7-inch nakiri and a handcrafted acacia wood presentation gift box.
