Why a santoku
Push cuts, flat board contact, no rocking
Santoku means 'three virtues' — meat, fish and vegetables. The flatter belly sits closer to the board, so you cut with a straight downward push rather than a rolling chop. That suits high-volume vegetable prep and precise slicing. At 238g the X1 is balanced rather than heavy, so it stays nimble through a long board session.

The steel
Powder-steel core, 73-layer Damascus
The cutting core is 14Cr14MoVNb powder steel, hardened to 62±2 HRC through vacuum heat treatment and a deep-freeze cycle for a fine, stable grain. It is clad in 72 layers of 316/316L stainless on each side for a true 73-layer Damascus blade. The result is a hard, keen edge with corrosion-resistant flanks. Blade stock is 2.2mm at the spine, with a polished and sandblasted finish that helps food release.
