DESCRIPTION

The 7.5 inch santoku is the all-rounder for precise, push-cut slicing — fish, vegetables, boneless meat — with the flat profile and nimble length Japanese-style cooks love. The Xinzuo X1 Series delivers it in flagship form.

An Edge That Stays Razor-Sharp

A 14Cr14MoVNb high-carbon powder-steel core hardened to HRC 62-64 keeps this santoku slicing cleanly far longer between sharpenings, while 73 layers of Damascus give every blade a unique rippling pattern.

Balanced for Control

The full-tang build and curved Italian olive wood handle put the weight exactly where you want it for confident, controlled cuts.

The everyday santoku, built like a flagship

X1 Flagship Series

The everyday santoku, built like a flagship

The santoku is the knife you reach for most: a flat-ish profile and short, nimble 190mm blade that rocks less and pushes more. The X1 puts that all-rounder geometry on Xinzuo's flagship build — a powder-steel core, 73-layer Damascus and an olive wood handle. One knife for vegetables, fish and boneless proteins, made to a standard most people only buy once.

Push cuts, flat board contact, no rocking

Why a santoku

Push cuts, flat board contact, no rocking

Santoku means 'three virtues' — meat, fish and vegetables. The flatter belly sits closer to the board, so you cut with a straight downward push rather than a rolling chop. That suits high-volume vegetable prep and precise slicing. At 238g the X1 is balanced rather than heavy, so it stays nimble through a long board session.

Powder-steel core, 73-layer Damascus

The steel

Powder-steel core, 73-layer Damascus

The cutting core is 14Cr14MoVNb powder steel, hardened to 62±2 HRC through vacuum heat treatment and a deep-freeze cycle for a fine, stable grain. It is clad in 72 layers of 316/316L stainless on each side for a true 73-layer Damascus blade. The result is a hard, keen edge with corrosion-resistant flanks. Blade stock is 2.2mm at the spine, with a polished and sandblasted finish that helps food release.

Olive wood, full tang

In the hand

Olive wood, full tang

A full-tang construction runs the steel through an olive wood handle — each piece carries its own grain, so no two are identical. The award-winning profile (designed by Steve Cheng, Gold at the 2024 London Design Awards) keeps weight balanced toward the hand for control during fine work. Hand wash and dry after use; this is not a dishwasher knife.

FAQs

Is this a real Damascus blade?

Yes. It is a genuine 73-layer Damascus blade — a 14Cr14MoVNb powder-steel core clad in 72 layers of 316/316L stainless steel.

What is the edge angle?

15 degrees per side, a double bevel Xinzuo calls the 'Golden Angle'. It is keen enough for fine slicing yet robust enough for daily prep.

How hard is the blade?

62±2 HRC. The powder-steel core is set by vacuum heat treatment and a deep-freeze cycle for a fine, stable grain that holds an edge.

What is a santoku good for, and how is it different from a chef's knife?

The santoku is a nimble all-rounder for vegetables, fish and boneless meat. Its flatter profile favours straight push cuts and close board contact, where a chef's knife is built to rock.

Can I put it in the dishwasher?

No. Hand wash and dry after use. Avoid cutting hard or frozen items, and hone regularly to keep the edge true.

What handle is it?

A full-tang olive wood handle. The grain varies piece to piece, so each knife is slightly different.

Does it come with a warranty?

Yes, a lifetime guarantee. Some regional distributors state a 10-year term.
