The Nakiri is purpose-built for vegetables: a straight, flat edge that meets the board along its full length, so every push-cut severs cleanly from heel to tip. Why A Nakiri
Built For Vegetable Prep, Not Compromise
A flat edge means full board contact on every stroke — push straight down and through, and the cut completes in one motion. The tall blade face gives knuckle clearance over the board and doubles as a scoop to carry prep from board to pan. Square heel and tip keep cuts square. The Steel
73-Layer Damascus Over Powder Steel
The cutting core is 14Cr14MoVNb powder steel, hardened to 62±2 HRC by vacuum heat treatment and deep-freeze. Around it sit 72 layers of 316/316L stainless cladding, forging the 73-layer Damascus that carries a raindrop pattern down the blade. Powder steel takes a finer, longer-holding edge than conventional stainless. Hand wash only.

Olive Wood, Full Tang
The handle is olive wood — dense, warm-grained, no two alike — set over a full tang for balance and a planted feel through the cut. A single mosaic rivet finishes it. The whole knife runs about 261g, a substantial weight that lets the blade do the work on a push-cut.
