7.5" Nakiri Knife - X1 Series (X01)

The X1 Flagship Nakiri is a 7.5-inch (190mm) Japanese vegetable knife built on a 73-layer Damascus blade over a 14Cr14MoVNb powder-steel core. The flat edge runs the full length, so a single push-cut clears the board in one pass — no sawing, no half-cut ends. The tall blade gives knuckle clearance and a wide face for scooping. Olive wood handle, full tang, finished in Yangjiang. The X01 Flagship series won the Gold Prize at the 2024 London Design Awards.

DESCRIPTION

The 7.5 inch nakiri is built for one thing and does it beautifully: vegetables. Its tall, flat blade lets you chop straight down through cabbage, carrots and herbs with clean, full-contact cuts. The Xinzuo X1 Series elevates it to flagship grade.

A Core That Holds Its Edge

Hardened to HRC 62-64, the 14Cr14MoVNb high-carbon powder-steel core keeps this nakiri slicing through vegetable after vegetable without dulling, while 73 layers of Damascus give every blade its own rippling pattern.

Stable, Comfortable Chopping

The full-tang build and curved Italian olive wood handle keep the tall blade balanced and steady through repetitive prep.

The Nakiri That Clears the Board in One Pass

X1 Flagship Series

The Nakiri That Clears the Board in One Pass

This is the flagship of the Xinzuo range. The Nakiri is purpose-built for vegetables: a straight, flat edge that meets the board along its full length, so every push-cut severs cleanly from heel to tip. No rocking, no trailing connection left on the onion. The 73-layer Damascus blade wraps a 14Cr14MoVNb powder-steel core, hardened to 62±2 HRC and ground to 15 degrees per side. The X01 series took the Gold Prize at the 2024 London Design Awards.

Built For Vegetable Prep, Not Compromise

Why A Nakiri

Built For Vegetable Prep, Not Compromise

A flat edge means full board contact on every stroke — push straight down and through, and the cut completes in one motion. The tall blade face gives knuckle clearance over the board and doubles as a scoop to carry prep from board to pan. Square heel and tip keep cuts square. If you break down vegetables daily, this is the shape that does it fastest.

73-Layer Damascus Over Powder Steel

The Steel

73-Layer Damascus Over Powder Steel

The cutting core is 14Cr14MoVNb powder steel, hardened to 62±2 HRC by vacuum heat treatment and deep-freeze. Around it sit 72 layers of 316/316L stainless cladding, forging the 73-layer Damascus that carries a raindrop pattern down the blade. Powder steel takes a finer, longer-holding edge than conventional stainless. Hand wash only.

Olive Wood, Full Tang

In The Hand

Olive Wood, Full Tang

The handle is olive wood — dense, warm-grained, no two alike — set over a full tang for balance and a planted feel through the cut. A single mosaic rivet finishes it. The whole knife runs about 261g, a substantial weight that lets the blade do the work on a push-cut.

FAQs

What is a nakiri knife used for?

It is a Japanese vegetable knife. The flat edge makes full contact with the board on every stroke, so a straight push-cut slices cleanly through vegetables in one pass — ideal for onions, cabbage, cucumber and herbs.

Is the blade real Damascus?

Yes. It is a genuine 73-layer Damascus blade — 72 layers of 316/316L stainless cladding forged around a 14Cr14MoVNb powder-steel cutting core, finished in a raindrop pattern.

How hard is the blade?

62±2 HRC, achieved with vacuum heat treatment and a deep-freeze cycle. The powder-steel core takes and holds a fine edge.

What angle is the edge?

15 degrees per side, a double bevel — Xinzuo's 'Golden Angle' for vegetable work.

What is the handle made of?

Olive wood over a full tang, finished with a single mosaic rivet. Each handle's grain is unique.

Can I put it in the dishwasher?

No. Hand wash only, then dry. Dishwashers dull the edge and damage the wood handle.

Where is it made?

Yangjiang, Guangdong, China — the heart of China's knife industry. The X01 Flagship series won the Gold Prize at the 2024 London Design Awards.
