8.5" Bread Knife - X1 Series (X01)
The X1 Series 8.5-inch bread knife is a serrated slicer built on 73-layer Damascus steel with a 14Cr14MoVNb powder-steel core. The pointed serrations bite through crusty sourdough, soft sandwich loaves, and ripe tomatoes without crushing the crumb. An olive wood handle and full-tang construction balance the 215mm blade for clean, single-stroke cuts.

DESCRIPTION
A great bread knife should glide through a crusty sourdough without crushing the crumb, then handle tomatoes and cakes just as cleanly. This 8.5 inch X1 Series bread knife does exactly that.
A Serrated Edge That Lasts
The 14Cr14MoVNb high-carbon powder-steel core hardened to HRC 62-64 means the teeth on this bread knife stay sharp far longer than ordinary serrated blades, while 73 layers of Damascus finish each blade with a distinctive flowing pattern.
Comfortable Through Every Slice
The full-tang construction and signature curved Italian olive wood handle give you a secure, balanced grip for clean sawing strokes.

X1 Flagship Series
The Bread Knife Built to Slice, Not Crush
The Flagship series is Xinzuo's top tier, and this bread knife carries the full spec into a serrated profile. A 215mm blade of 73-layer Damascus, forged around a 14Cr14MoVNb powder-steel core and hardened to 62 HRC. The serrations do the work a straight edge can't: they grip the crust and carry through the crumb without compressing the loaf. One long stroke, clean slice, intact bread.

Why Serrated
Crust Without the Crush
A straight edge needs downward force to break a hard crust, and that force flattens soft bread. The serrated edge changes the job entirely. Each pointed tooth concentrates pressure to saw through the crust, while the gullets between them slice the crumb on the pull stroke. Crusty loaves, soft rolls, and skin-on tomatoes all cut clean with almost no pressure.
- Pointed serrations
- Saws through crust
- No crumb compression
- Skin-on tomatoes too
The Steel
73-Layer Damascus, Powder-Steel Core
The cutting core is 14Cr14MoVNb powder steel, clad in 72 layers of 316/316L stainless to build the 73-layer Damascus pattern. Vacuum heat treatment with a deep-freeze cycle takes hardness to 62±2 HRC. On a serrated knife this matters more than most buyers realise: serrations can't be honed at home like a straight edge, so the steel has to hold its bite. A harder, finer-grained powder core keeps each tooth sharp through years of crusty loaves.

In the Hand
Olive Wood, Full Tang
The handle is solid olive wood over a full tang, so the weight sits forward into the blade for a controlled sawing stroke. At 207g the knife has enough mass to carry through a thick crust without feeling heavy across a board of slices. Olive wood's tight, oily grain stands up well to kitchen use when hand washed and kept dry.

FAQs
Can a serrated bread knife be sharpened or honed?
Not like a straight edge. You can't run serrations along a honing rod or a standard whetstone. The bite comes from the steel holding its edge, which is why this knife uses a hardened 62 HRC powder-steel core that stays sharp for years.
Why serrated instead of a straight blade for bread?
Serrations grip and saw through a hard crust, while the gullets slice the soft crumb on the pull stroke. A straight edge needs downward force that crushes soft bread. Serrated is the right tool for crusty and soft loaves alike.
Is this a real Damascus blade?
Yes. It is 73-layer Damascus, built from a 14Cr14MoVNb powder-steel core clad in 72 layers of 316/316L stainless steel.
What can I cut besides bread?
Crusty and soft loaves, bread rolls, cakes, and skin-on tomatoes all cut clean. The sawing action suits anything with a firm exterior and soft interior.
Can it go in the dishwasher?
No. Hand wash only and dry it after use. Olive wood and a hardened Damascus blade both prefer to be kept out of the dishwasher.
How long is the blade and is it long enough for sourdough?
The blade is 8.5 inches (215mm), long enough to carry through a tall sourdough or rustic loaf in a single stroke.
What is the warranty?
A lifetime guarantee. Some regional distributors state a 10-year term.
