At 100mm with a curved bird's-beak point, this blade is made for the jobs you do off the board: peeling apples and potatoes, hulling strawberries, deveining prawns, segmenting citrus, and trimming the eyes out of vegetables. The short blade and light 105g balance give you the control a full-size knife can't, so the fine work stays fine.

The cutting core is 14Cr14MoVNb powder steel, hardened to 62±2 HRC under vacuum heat treatment and deep freeze for fine, even grain. Around it sit 72 layers of 316/316L stainless cladding, forging the 73-layer Damascus pattern that runs the length of the blade. The edge is ground to 15 degrees per side, the double-bevel Golden Angle, so a small knife still bites cleanly.
