Flat profile, push-cut precision

The 7-inch blade runs a flatter belly than a chef's knife, so the edge meets the board along its length — ideal for straight-down push cuts rather than rocking. The hollow-edge granton face creates small air pockets that stop potato, cucumber and other sticky slices from clinging to the steel. The result is faster, cleaner prep with less drag.

Ground to a 15-degree edge per side with a 2.2mm spine.
