DESCRIPTION

The 3.5-inch paring knife is your hand-held detail tool — peeling, hulling, deveining and the close, precise work where a big blade only gets in the way. The Xinzuo Yu Series (B13S) makes everyday precision affordable.

A Clean Stainless Point

The short blade is German 1.4116 stainless steel (the X50CrMoV15 high-carbon stainless equivalent), vacuum heat-treated and deep-frozen to a stable HRC 55-57. It's a clean satin mono-steel blade — agile, sharp and quick to bring back to a fine edge.

Control in Your Hand

The natural ebony wood handle and double steel bolster give a secure, balanced grip, and the full tang keeps the knife steady for delicate, controlled cuts.

The little blade that does the fiddly work

YU SERIES PARING KNIFE

The little blade that does the fiddly work

Every kitchen needs one small knife that earns its keep. The Yu Series 3.5-inch paring knife is the in-hand tool for jobs the chef's knife can't manage: hulling strawberries, peeling shallots, deveining prawns, scoring skin. The 93mm blade is short enough to steer with your fingertips and stiff enough to hold a clean line. German 1.4116 stainless, full-tang construction, ebony handle. A dependable everyday workhorse, not a showpiece.

Precision lives in the last few centimetres

WHY A SHORT BLADE

Precision lives in the last few centimetres

Small jobs reward a small blade. At 3.5 inches the Yu paring knife sits in a pinch grip with the tip right under your eye, so you cut by feel rather than force. The 15-degree-per-side edge slices cleanly through skins and membranes without tearing, and the short blade turns tight curves a long knife simply can't follow. This is the knife you reach for in the hand, off the board.

BLADE STEEL

German 1.4116, vacuum heat-treated

The blade is German 1.4116 (X50CrMoV15) stainless, hardened to 56-58 HRC. It is a tough, corrosion-resistant, forgiving steel: it takes a keen edge, resists rust and staining, and is easy to bring back on a honing rod or stone. Vacuum heat treatment keeps hardness consistent across the blade. This is not a Damascus knife and makes no claim to be one, it is honest German stainless built to be used daily.

Ebony handle, full-tang spine

IN THE HAND

Ebony handle, full-tang spine

The handle is ebony wood over a full tang, so the steel runs the length of the grip for balance and stability in detail work. Ebony is a dense, close-grained hardwood that sits comfortably in a pinch grip for long peeling and trimming sessions. Hand wash and dry it after use, and an occasional wipe of food-safe oil keeps the timber looking its best.

FAQs

Is this a Damascus knife?

No. The Yu Series paring knife has a solid German 1.4116 (X50CrMoV15) stainless blade, not a Damascus blade. It makes no Damascus claim.

How long is the blade?

93mm, or 3.5 inches, which is the standard size for a paring knife and ideal for small, in-hand jobs.

What is the handle made of?

Ebony wood over a full tang, so the steel runs the full length of the handle for balance and stability.

How hard is the steel?

56-58 HRC. That balance keeps the edge keen while staying easy to sharpen and resistant to chipping in everyday use.

What is the edge angle?

15 degrees per side, ground for clean cuts through skins, membranes and small produce.

Can I put it in the dishwasher?

No. Hand wash and dry it straight after use. The dishwasher will damage both the edge and the ebony handle.

What jobs is it best at?

Peeling, trimming, coring, deveining, hulling and shaping. It is the precision knife for tasks too small for a chef's knife.
