DESCRIPTION
The 9-inch bread knife is made for crusty loaves, soft cakes and ripe tomatoes — the long blade lets you saw cleanly without crushing what's underneath. The Xinzuo Yu Series (B13S) delivers it at honest everyday value.
Clean Stainless That Holds Up
The blade is German 1.4116 stainless steel (the X50CrMoV15 high-carbon stainless equivalent), vacuum heat-treated and deep-frozen to a stable HRC 55-57. It's a clean satin mono-steel blade, and the generous 9-inch length gives you the reach a serrated bread knife needs.
A Steady, Comfortable Grip
The handle is natural ebony wood set behind a double steel bolster, with a full tang for the balance and control that long sawing strokes call for.

The Loaf-Length Bread Knife
Bread knives live or die on their serrations. The Yu B13S runs scalloped teeth down a 229mm blade so it grips a crust and saws clean through, rather than compressing a fresh loaf flat. German 1.4116 stainless takes the work day after day, and the ebony handle keeps the weight balanced through a long sawing stroke. One knife, built for bread, cake and pastry.

WHY SERRATED
Grips The Crust, Spares The Crumb
A straight edge slides off a hard crust and squashes a soft one. The Yu's scalloped serrations bite into crust and crust alike, so each tooth does the cutting while the loaf holds its shape. The 9-inch length means you clear most loaves and cakes in a single pass, not a back-and-forth that tears the crumb.
- Scalloped serrations
- 229mm reach
- Crust to crumb
- Single-pass slicing
THE STEEL
German 1.4116 Stainless, 56-58 HRC
The blade is mono-steel German 1.4116 (X50CrMoV15) high-carbon stainless, vacuum heat-treated to 56-58 HRC. It is not Damascus, and it doesn't need to be. For a serrated bread knife you want a tough, corrosion-resistant stainless that holds its tooth edge through crusty loaves. The spine measures 2.2mm and the knife weighs 230g, ground to 15 degrees per side.

IN THE HAND
Ebony And A Copper Medallion
The handle is natural ebony wood in a Western profile, dehorned for a smooth grip and fixed with three rivets. The centre pin is a decorative copper mosaic medallion, set against a stainless head. A full tang runs the length of the handle, so the 230g knife stays balanced through the longer sawing stroke a bread knife asks for.

FAQs
Why a serrated edge for bread?
The scalloped teeth grip the crust and saw through it, so the loaf isn't crushed flat the way a straight edge would squash it. Each tooth does the cutting.
Can I hone or sharpen this like my chef's knife?
No. You can't run serrations over a honing steel or a flat whetstone. They hold their edge far longer than a straight edge, and when they eventually dull each tooth needs a tapered rod or professional sharpening.
Is this a Damascus blade?
No. It is mono-steel German 1.4116 (X50CrMoV15) stainless. That's the right choice for a tough, corrosion-resistant bread knife.
How long is the blade?
9.0 inches (229 mm), long enough to clear most loaves and cakes in a single pass.
What is the handle made of?
Natural ebony wood in a Western profile with a full tang and three rivets, the centre one a decorative copper mosaic medallion.
Can it go in the dishwasher?
No, hand wash only. Dishwasher detergents and heat are hard on both the steel and the ebony handle.
What can I cut besides bread?
The same serrations handle cake, pastry and other soft or crusty foods that a straight edge would tear or crush.
