10" Carving Knife - Uliassi Series (X03)
A 10.2" carving knife built for long, clean slices in a single stroke. The blade is 73-layer Damascus over a 14Cr14MoVNb powder-steel core, ground to 15° per side and finished with a forged raindrop pattern. The long, narrow profile glides through roasts, hams and poultry without sawing, and the rosewood handle keeps the weight balanced over a full carving session.

DESCRIPTION
Stop hacking at the Christmas ham with your chef knife. A 10-inch carving knife has one job and it does it better than anything else in the block: long, smooth pulling strokes through large proteins, leaving slices thin and even enough to fan across the plate. Roast brisket, leg of lamb, smoked turkey breast, whole poached chicken - this is the blade you reach for once the resting time is up.
The Long Blade Advantage
A carving knife earns its length at the table. The 10-inch blade lets you run the full length of a large joint in a single uninterrupted stroke, so the slice doesn't tear from the redirects you get with a shorter blade. The narrow profile reduces friction against the meat face, which matters on dense proteins like brisket where a wide blade drags. You're not fighting the cut. The knife does the work while you hold the angle steady.
73-Layer Damascus, Built for the Long Edge
The core is 14Cr14MoVNb powder steel, vacuum heat-treated to 62 HRC. On a long carving blade, edge retention is what separates a good knife from a great one - you don't want the last slices of the roast to be worse than the first. The powder steel core holds a fine edge through a long carving session without rolling or needing a touch-up mid-table. Wrapped in 73 layers of Damascus cladding, rosewood handle, hidden tang construction that keeps the weight distribution along the length of the blade where carving work needs it.

X03 XING SERIES
Built For The One-Stroke Slice
The X03 Xing carving knife is the slicer in the range. A long 10.2" blade, a 15° edge per side, and a 73-layer Damascus body over a 14Cr14MoVNb powder-steel core. It is made to draw through a roast in one clean pass instead of sawing through it. Vacuum heat treatment and a deep-freeze cycle hold the edge at 62±2 HRC, so the blade carves the Sunday roast and the Christmas ham the same way every year.

WHY A CARVER, NOT A CHEF KNIFE
Long Blade, Clean Slices
A chef knife is short and tall, made for rocking and chopping on a board. A carving knife is long and narrow, made for slicing through cooked meat in one draw. The 10.2" blade clears a full ham or turkey breast in a single stroke, and the narrow profile means less drag, less tearing, and even slices that hold their shape on the plate.

THE STEEL
Powder Core, 73-Layer Damascus
The cutting core is 14Cr14MoVNb powder steel, vacuum heat treated and deep frozen to 62±2 HRC. That core is wrapped in 72 layers of 316/316L stainless cladding, forged into a 73-layer raindrop Damascus pattern that is forged, not laser-engraved. The result is a hard, fine edge that takes the 15° carving grind and holds it, with stainless cladding either side for corrosion resistance.

IN THE HAND
Rosewood And Mosaic Rivets
The rosewood handle is set on a hidden tang and pinned with copper and brass mosaic flower rivets. At 235g the knife is light enough for repeated slicing without fatigue, with the balance kept forward of the bolster so the blade does the work. Hand wash only, dry after use.
