Diamond Particles, Not Just Steel

The rod is 430 stainless steel coated with diamond particles, which means it can both realign a rolled edge and lightly refine it on the same pass. It works on any of the X03 series knives, including the powder steel core blades at 62 HRC - hardness that a plain steel honing rod can struggle to grip. Diamond abrasive bites into hard steel where a smooth rod just slides. The rosewood handle matches the rest of the Uliassi Series and the 23 cm rod length gives enough working surface for the 10-inch chef and carving knives.

HOW TO HONE

Ten seconds before you cook

Hold the rod tip-down on the board or stand it on the bench. Set the knife heel against the top of the rod at a shallow angle, matching the blade's bevel, and draw the whole edge down and toward you in one smooth pass. Alternate sides, four or five light strokes each, letting the weight of the blade do the work. Do this at the start of a session, or whenever the knife starts dragging instead of slicing. When honing stops bringing the edge back, that is your cue to sharpen on a stone, not push harder on the rod.

Keep it clean and dry

Hand wash only, then dry straight away. Do not put the rod through the dishwasher. Wipe the steel down after honing to clear the fine swarf it lifts off your blades, and store it dry so the rod and the rosewood handle stay in good condition. Treated this way it is a once-and-done buy, backed by a lifetime warranty.

FAQs

Does a honing rod sharpen my knife?

No. A rod hones, it does not sharpen. It realigns the fine edge that rolls over during normal use so the knife feels sharp again, but it removes almost no steel. When honing no longer revives the edge, sharpen on a whetstone.

How often should I use it?

Often and lightly. A few passes at the start of each cooking session keeps the edge true. Honing little and often delays the day you need to sit down at the stone.

What is the rod made of?
