8.5" Bunka Knife - Uliassi Series (X03)
The 8.5" Bunka is the precision specialist of the X03 range. Its reverse-tanto k-tip puts a sharp, accessible point exactly where you need it for fine tip work, while the flat-leaning profile drives clean push cuts through veg, herbs and proteins. The blade is 73 layers of Damascus folded around a 14Cr14MoVNb powder-steel core, ground to 15 degrees per side and seated in a rosewood handle.

DESCRIPTION
This is the knife you pick up when you want something lighter and more nimble than a 10-inch but need a blade that still handles real prep - not just garnish work. The 8.5-inch Bunka gives you a flat belly for clean push cuts through daikon and leeks and a sharp reverse-tanto tip that's built for the kind of detail work a curved chef knife makes awkward. It sits right at the crossover between a daily driver and a specialist.
The Bunka Advantage
Where a Western chef knife curves up toward the tip, a Bunka runs flat along the belly and then drops sharply at the spine to meet that reverse-tanto point. The flat section is what makes it fast for push-cutting thin slices of courgette or ribbons of leek. The tip is what makes it useful for scoring skin, trimming artichokes, or working around bones without swapping blades. You'll reach for it first on most Japanese-style prep and many Western tasks too.
73-Layer Damascus, Powder Steel Core
The core is 14Cr14MoVNb powder steel, vacuum heat-treated to 62 HRC. It's the same steel used in the Lan Series (B37) - a fine-grained powder metallurgy alloy that gets very sharp and stays sharp through full prep sessions. The 73-layer Damascus cladding wraps the core for chip resistance and the flowing wave pattern that runs across the full blade face. Rosewood handle, hidden tang, sized for comfortable pinch-grip use over long periods.

X03 SERIES
The K-Tip Precision Knife
A bunka is built around its tip. The X03 sharpens that idea into a reverse-tanto k-tip: a high, flat point you can drop straight onto the board for scoring, fine slicing and detail work. Behind it sits a powder-steel core wrapped in 73-layer Damascus, so this isn't a soft all-rounder pretending to be precise. It is a hard, thin, accurate blade that holds its edge.

WHY A BUNKA
Tip Work Meets Push Cuts
The bunka does two jobs a santoku won't. The angular k-tip gives you a genuine point for scoring, separating and fine detail, and the flat belly lets you push-cut straight down through onions, herbs and boneless protein without rocking. One knife, both motions.
- Reverse-tanto k-tip
- Flat profile for push cuts
- 8.5" blade
- Precise tip control
THE STEEL
Powder Core, 73-Layer Damascus
The cutting core is 14Cr14MoVNb powder steel, hardened to 62±2 HRC by vacuum heat treatment and a deep-freeze cycle. That hardness is what holds a thin 15-degree edge between sharpenings. Around the core sit 72 layers of 316/316L stainless cladding, folded to 73 layers of Damascus that resist staining and carry the pattern.

IN THE HAND
Rosewood, Balanced Light
The handle is rosewood over a hidden tang, run as a light 269g blade so the knife stays nimble for tip work rather than heavy through the cut. Hand wash and dry only, never the dishwasher. Backed by a lifetime warranty.

FAQs
What makes a bunka different from a santoku?
Both are Japanese all-rounders, but the bunka has an angular reverse-tanto k-tip instead of a rounded one. That gives you a real point for scoring and fine detail, while the flat profile still push-cuts like a santoku.
What steel is the X03 Bunka made from?
The cutting core is 14Cr14MoVNb powder steel, clad in 72 layers of 316/316L stainless and folded to 73-layer Damascus.
How hard is the blade?
It is hardened to 62±2 HRC using vacuum heat treatment and a deep-freeze cycle, which lets it hold a thin edge.
What is the edge angle?
15 degrees per side (15°±1), ground thin for precise cutting.
Can I put it in the dishwasher?
No. Hand wash and dry the blade only. The dishwasher will damage the edge and the rosewood handle.
What is in the box?
The 8.5" Bunka knife, a wooden sheath (saya) and a handmade gift box.
Is it covered by a warranty?
Yes, the X03 Bunka carries a lifetime warranty.
