That is a hundredth of a human hair. At that scale, steel does not behave like the rigid bar of metal you see in your hand. It behaves like a thin foil. Pressure rolls it. Burrs hang off it.
The burr is the problem
When you grind one side of an edge against a whetstone, the steel at the apex deforms toward the opposite side. That deformed wire of metal, hanging off the edge like a banner, is the burr. Switch sides, do the same thing, and the burr flips. After hundreds of strokes on a 1000 grit stone, you have a workable edge plus a fluttering wire of fatigued steel running the full length of the blade.
You can feel the burr by running a fingertip carefully across the edge from spine to apex (never along the edge). The side with the burr drags slightly. The other is smooth. The burr is what makes a freshly sharpened knife feel grabby on tomato skin, then suddenly very sharp once it tears off.
Stropping fatigues that burr. The leather is firm enough to grip the metal but soft enough not to grind it. Each pass folds the burr in one direction, the next folds it back. Five to ten passes and the metal at the base of the burr work-hardens, fractures and falls away. What is left is the actual apex, exposed and clean.
The apex needs aligning
Even with the burr gone, the apex itself sits slightly bent from the last few stone strokes. Picture a row of teeth where every other one leans sideways. Edge-trailing strokes on leather push the bent apex straight again. After ten to twenty passes per side, every micro-tooth points the same way and the knife cuts along its full length. This is why a knife that came back dull from a week of cooking can sometimes be brought back with thirty seconds on the strop and no stone work. The edge isn't gone. It is bent. Stropping straightens it.

Does Stropping Sharpen a Knife or Just Polish It?
Plain leather does not sharpen. It removes burrs and aligns the apex, but it removes effectively no metal. Loaded with a fine compound, a strop becomes a very high grit sharpening surface, and it does abrade microscopic amounts of steel from the apex. So the answer depends on the compound.
For kitchen knives, the practical position is in the middle. You are not sharpening in the heavy sense (resetting tip radius, repairing a chip). You are refining a freshly sharpened edge to a finer geometry than the whetstone could produce. The grit equivalents work out roughly as follows.
For softer knives below 60 HRC, including the Xinzuo Supreme series at 57 HRC, plain leather is enough. The burr off a 3000 or 5000 grit stone on softer steel is fragile and burnishes off cleanly. How Do You Use a Leather Strop on a Kitchen Knife?
Lay the strop on a flat bench. Hold the knife at the same angle you used on the whetstone, edge facing the leather. Pull the knife along the leather away from the edge (spine leading, edge trailing) using light pressure. Flip. Repeat ten to twenty times per side, alternating. Done in under a minute.
The motion has one absolute rule: edge-trailing, never edge-leading. If you push the knife into the leather edge first, you slice the leather and roll the apex over. The whole point of leather is that it is firm enough to support the edge but soft enough not to grind it, and that only works when the edge is dragging behind the spine.
Step by step

- Match your sharpening angle. If you finished the knife at 15 degrees per side on the stone, hold the strop at 15 too. - Set the heel of the blade on the leather, near the handle end. Apply only the weight of the blade plus a fraction more. If the leather is compressing visibly, you are pressing too hard.
- Draw the knife across the leather away from the edge. Spine leading, edge trailing. Sweep slightly so the curve near the tip also sees leather.
- Lift at the end of the stroke. Don't drag back. Flip to the other side and start from the same end of the strop.
- Alternate sides for ten to twenty passes per side. Beyond twenty you are work-hardening the apex unnecessarily.
- Test on a tomato. A properly stropped knife glides through tomato skin under its own weight. If you have to push, go back for another five passes per side.
Pressure is the most common mistake. Heavy pressure rolls the apex backward and rounds off the tip you spent twenty minutes refining. The rule: the leather should not visibly compress as the blade moves across it.
Should You Use a Compound or Plain Leather?
Use plain leather as a finishing step after every sharpening session, regardless of steel. Add a compound when you want to take the finish higher than your stones can produce, or for hard steel where the burr resists plain leather. Most home cooks are fine with plain leather. Enthusiast cooks with a Damascus chef knife will see a real benefit from green compound or 1 micron diamond paste.
If you decide to add compound, do it on one side only and keep the other plain. For solid bars (the green chromium oxide block), rub the bar across the leather like a crayon until you have a thin even coat. For diamond paste from a syringe, squeeze a few small dots and spread with a clean finger. A pea-sized total per side is plenty. Recharge every six months. Don't mix compounds on the same side.
What Is Vegetable Tan Leather and Why Does It Matter?
Vegetable tanned leather is processed with plant-based tannins from oak bark, chestnut or quebracho. The result is a firm, dense, pH-neutral surface that holds its shape under stropping pressure and accepts compound evenly. The alternative is chrome-tanned leather, which is softer and contains acidic residues that can pit fine steel over years. It is the leather of a belt or a couch, not what you want against the apex of a hand-finished kitchen knife.

How Often Should You Strop a Kitchen Knife?
Strop after every full sharpening session, and before precision work like fish skinning or thin cucumber slices. Past that, a quick fifteen-second strop every couple of weeks keeps the apex aligned between sharpenings. If you find yourself stropping daily, you are sharpening too aggressively.
The natural place for stropping is at the end of a whetstone session. You have come up through 1000 grit, then 3000 or 5000 grit, removing a burr at each stage, and you finish on the strop to deburr the final apex. Worth knowing: Over-stropping is real. The same gentle abrasion that polishes the apex will, given enough passes, round it off into a small radius and dull the knife.
