5" Utility Knife - Retro Series (PM8S)

4.73 Stars (74 reviews)

The 5.5" utility from the Retro Series fills the gap a paring knife is too small for and a chef's knife too big. Three-layer San Mai construction wraps a 10Cr15CoMoV core in Damascus-patterned SuS410 cladding, finished with a retro-frosted black stonewash. Long enough for a sandwich roll, citrus or a chicken breast; nimble enough for shallots and small tomatoes. Red wood and black buffalo horn handle, full tang, lifetime warranty against manufacturing defects.

DESCRIPTION

Reach for this when the chef knife is too much. Cherry tomatoes that roll away from a big blade, silverskin on a pork fillet, a peach you want halved cleanly without the pit dragging the flesh apart - this is the knife for that middle tier of jobs. It sits between paring knife territory and full utility length, with enough belly to slice and enough control to trim.

The Right Size for the Job

Most kitchens have a chef knife and a parer and a gap in between where neither feels right. The utility knife fills that gap. It's nimble enough to work close to the board for deveining prawns or slicing a block of halloumi, but long enough to break down a mango or trim the fat cap off a lamb rack without fighting the curve of the blade. The thin profile keeps it from wedging in soft produce the way a thicker chef knife will.

Same Steel, Same Handle, Ready to Match

The blade is 3-layer 10Cr15CoMoV composite: a hard high-carbon core vacuum heat-treated to 60-62 HRC, flanked by two layers of softer stainless for corrosion resistance. It holds a fine edge without the brittleness you'd get from a single-steel hard blade. The octagonal Red Wood handle with genuine black buffalo horn collar is the same profile as every other knife in the Retro Series, so it pairs cleanly on the bench or in the block.

The In-Between Knife You Reach For Most

Most kitchens own a paring knife and a chef's knife and nothing for the jobs in between. The 5.5" utility is that knife. Slicing a bread roll, halving a lemon, trimming a chicken fillet, dicing a shallot too fiddly for the big blade. The Retro Series gives it a 10Cr15CoMoV core, a retro-frosted black stonewashed finish, and a red wood and buffalo horn handle that earns its keep on the board every day.

Paring Precision, Chef's Reach

Why A Utility

Paring Precision, Chef's Reach

A 5.5" blade is the sweet spot. It clears tall produce a paring knife can't, yet stays controllable through small, detailed work where a chef's knife feels clumsy. At 2.4mm at the spine it cuts thin and clean without wedging, and the 15° per side edge bites on the first pass.

3-Layer San Mai, 60±2 HRC

The Steel

3-Layer San Mai, 60±2 HRC

A 10Cr15CoMoV cutting core is forge-clad in two outer layers of Damascus-patterned SuS410 stainless. The hard core takes and holds a keen edge; the softer stainless cladding adds corrosion resistance and the frosted Damascus look. Vacuum heat treatment locks the core to 60±2 HRC, so the edge stays sharp through real use and resharpens cleanly on a whetstone.

Red Wood And Buffalo Horn

In The Hand

Red Wood And Buffalo Horn

The handle pairs red wood with a black buffalo horn bolster, sitting over a full tang that runs the length of the knife for balance and durability. Light at 105g, it stays nimble for the quick, repetitive cuts a utility knife lives on. The retro-frosted black blade finish is stonewashed after heat treatment, so it hides marks and patina better than a mirror polish.

FAQs

Is this blade real Damascus?

Yes. It is 3-layer San Mai with Damascus-patterned SuS410 stainless cladding over a 10Cr15CoMoV core. The pattern and the clad construction are genuine, not an etched print.

What is the difference between a utility knife and a paring knife?

A paring knife is short for in-hand peeling and detail work. This 5.5\" utility is longer, so it reaches across a sandwich roll, citrus or a chicken fillet while staying more precise than a chef's knife.

How hard is the steel?

The core is vacuum heat treated to 60±2 HRC, hard enough to hold a keen edge through daily use and still take a fresh edge on a whetstone.

What is the handle made from?

Red wood paired with a black buffalo horn bolster, set over a full tang for balance and long-term durability.

Can it go in the dishwasher?

No. Hand wash with mild soap, then dry immediately. The dishwasher voids the warranty and can damage the wood and horn handle.

How do I sharpen and maintain it?

Sharpen on whetstones to the factory 15° per side. Cut on wood, rubber or quality plastic boards, and avoid bones, frozen food and hard pits.

Is it covered by a warranty?

Yes, a lifetime warranty against manufacturing defects such as layer delamination. Misuse, dropping and dishwasher damage are excluded.
