4.73 Stars (74 reviews)

The 5.8" Bunka from the Retro Series is a Japanese all-purpose blade built around a reverse-tanto K-tip and a flat belly. The 3-layer 10Cr15CoMoV core is clad in Damascus-patterned SuS410 stainless, then finished with a stone-washed, sandblasted black texture that gives the Retro range its name. Octagonal handle in red wood and black buffalo horn. Sized for board work where the tip does the talking.

DESCRIPTION

Reach for this when you want the bunka profile in a size that suits lighter work. At 5.8 inches, it handles the mid-tier prep jobs - slicing mushrooms, dicing a small block of firm tofu, prepping a single fennel bulb - without the weight and reach of the larger bunka. The reverse-tanto tip punches through the surface cleanly, and the flat belly keeps full board contact on every push cut.

A Petite Bunka for Precise Work

The petite size isn't just a scaled-down version of the longer knife. At this length it works better for in-close tasks where you want to feel exactly what the blade is doing. Thin-slicing a raw fish fillet, halving a block of mozzarella, or running through a punnet of mushrooms quickly are all jobs where this size outperforms a longer, heavier blade. It's also a good match for a smaller cutting board or a compact kitchen where a full 8-inch knife feels unwieldy.

Same Steel, Same Handle as the Rest of the Series

The blade is 3-layer 10Cr15CoMoV composite - hard core with corrosion-resistant outer layers - vacuum heat-treated to 60-62 HRC. It holds a very fine edge and responds well to a strop when you want it back to shaving sharp. The octagonal Red Wood handle with genuine black buffalo horn collar is the same profile as every other Retro Series knife, so the grip is already familiar if you've used a larger piece in the collection.

Complete Your Set

Pair it with the Retro 8.5" Bunka (PM8S-QFD) when you need the same profile with more reach for larger cuts, and the Retro 8.5" Chef Knife (PM8S-CS) for the rock-chopping tasks this flat bunka profile isn't built for.

The K-Tip That Earns Its Place

The K-Tip That Earns Its Place

A bunka is the knife you reach for when the santoku feels blunt at the front. The reverse-tanto tip drops you straight into precise tip work — scoring, fine slicing, detail cuts — while the flat belly handles clean push cuts through veg and fruit. At 5.8 inches it stays nimble. The Retro Series wraps that geometry in a stone-washed black finish and a wood-and-horn handle, so it looks the part on the magnet rack and works the part on the board.

Tip Work And Push Cuts In One Blade

Why A Bunka

Tip Work And Push Cuts In One Blade

The K-tip sits low and sharp, so the point is exactly where your eye is — ideal for scoring skins, fine julienne and detail cuts a rounded santoku can't reach. The flat belly keeps full contact with the board for clean push cuts, no rocking required. Ground to 15 degrees per side (30 inclusive) for a keen, food-releasing edge. Intended for vegetables, fruit and soft-texture foods — not for chopping hard items.

The Steel

3-Layer Composite, Vacuum Heat Treated

A 10Cr15CoMoV core takes and holds the edge, sandwiched between two Damascus-patterned SuS410 stainless cladding layers. Vacuum heat treatment brings the blade to 60±2 HRC — hard enough to stay sharp through real prep, forgiving enough to maintain at home. The retro frosted black texture is sandblasted on after heat treatment, so it's part of the finish, not a coating that wears through.

Octagonal, Wood And Horn

In The Hand

Octagonal, Wood And Horn

The full-tang blade runs into a traditional octagonal handle in red wood capped with black buffalo horn. The eight flats give a neutral, repeatable grip whether you pinch the blade or hold the handle, and the horn ferrule adds weight balance toward the bolster. Hand wash only — the natural materials and edge aren't built for a dishwasher.

FAQs

What is a bunka knife used for?

A bunka is a Japanese all-purpose knife. The K-tip gives you precise tip work — scoring, fine slicing and detail cuts — while the flat belly handles clean push cuts through vegetables and fruit.

How is a bunka different from a santoku?

Both are all-purpose Japanese blades, but the bunka's reverse-tanto K-tip puts a sharp point right at the front for detail work, where a santoku's rounded tip trades that away for a continuous curve.

What steel is this Retro Series bunka made from?

A 3-layer composite — a 10Cr15CoMoV core clad in Damascus-patterned SuS410 stainless — vacuum heat treated to 60±2 HRC.

Is the black finish a coating?

No. It's a stone-washed, sandblasted frosted texture applied after heat treatment, so it's part of the blade surface rather than a coating that flakes off.

What angle is the edge?

15 degrees per side, 30 degrees inclusive.

Can it go in the dishwasher?

No — hand wash only. The natural wood and buffalo horn handle and the edge aren't built for dishwasher cycles.

What can I cut with it?

Vegetables, fruit and soft-texture foods. It's not intended for chopping hard items like bone or frozen food.

Is it covered by warranty?

Yes — a lifetime warranty against manufacturing defects such as layer delamination. Misuse, dishwasher damage and dropping are excluded.
