A bread knife works differently to a chef's knife. Instead of pushing straight down, the row of pointed serrations grips the crust and starts the cut, while the recessed scallops between them carry the slice through soft crumb without tearing or flattening it. The 220 mm length means you clear most loaves in a single draw. A 2.4 mm spine keeps the blade rigid so it tracks straight rather than wandering.

The Steel

The blade is 3-layer composite construction: a 10Cr15CoMoV core clad in Damascus-patterned SuS410 stainless outer layers. It is vacuum heat treated and hardened to 60±2 HRC — hard enough to hold its serration points through everyday slicing, with stainless cladding that resists the acids in fruit and tomato. The vintage frosted-black surface is a stonewash and sandblast finish, not a coating.

The handle is a traditional Japanese octagonal (Wa) shape in red wood with a black buffalo horn collar — light and neutral, so the knife pivots naturally during a long slicing stroke. At 176 g the balance stays forward toward the blade where a bread knife wants it. Hand wash and dry only; the natural wood and horn are not made for a dishwasher.

FAQs

Can a serrated bread knife be sharpened or honed?

Not like a straight edge. You cannot run a serrated knife along a honing rod or a standard whetstone — the scallops sit below the points and never touch the stone. Each serration is individually maintained with a tapered ceramic or diamond rod, and a good bread knife needs this rarely. The 60±2 HRC steel holds its points well through normal slicing.

Why serrated and not a straight edge for bread?

Serrations grip and pierce a hard crust where a straight edge would skate or compress the loaf. The pointed teeth start the cut and the recessed scallops carry it through soft crumb cleanly, so slices keep their shape instead of squashing.

Is the blade Damascus?

Yes — it is a 3-layer composite with Damascus-patterned SuS410 stainless cladding over a 10Cr15CoMoV core. The pattern runs through the outer layers and pairs with the vintage frosted-black finish of the Retro Series.

Can I cut frozen bread or hard items with it?

No. This is a slicer for fresh bread, cake, pastry and fruit. Cutting frozen loaves, bones or other hard items can chip the serration points and falls outside the warranty.

Is it dishwasher safe?

No. Hand wash and dry only. The natural red wood and buffalo horn handle and the blade finish are not made for dishwasher heat and detergent.

What length is it and what does that suit?

The blade is 8.5" / 220 mm — long enough to clear most loaves and round sourdough in a single stroke, while staying easy to control for cake and fruit.

What handle does it have?

A traditional Japanese octagonal (Wa) handle in red wood with a black buffalo horn collar. It is light and neutral in the hand, which suits the long pivoting stroke of a bread knife.
