Stop crushing your crusty sourdough. A serrated bread knife cuts through a thick crust without pressing down, so the crumb underneath stays intact instead of collapsing flat. Reach for this one for anything with a hard crust and a soft interior. Sourdough and brioche loaves are the obvious use. A ripe roma tomato where you don't want the seeds squeezing out is the one that surprises people.
Serrated Edge, Damascus Spine
The serrated teeth bite into a hard crust and pull through cleanly without you needing to saw back and forth five times. The core is 10Cr15CoMoV high-carbon stainless, vacuum heat-treated to 60-62 HRC, and wrapped in 67 layers of Damascus cladding. That hardness keeps the teeth sharp through far more loaves than a softer bread knife would, and the Damascus pattern runs the full length of the spine so the knife looks good on the bench between uses.
Figured Sycamore, Full-Tang Build
The handle is figured sycamore, a dense hardwood with a rippled grain that feels different from the smooth plastics on cheaper bread knives. Full-tang construction means the steel runs the length of the handle, so the weight is balanced through your grip as you slice rather than the blade end tipping forward on you.

The Bread Knife That Saws Clean
A bread knife earns its keep on the crust. This 203mm serrated blade carries the same 67-layer Damascus construction as the rest of the Master series, but the work is done by the teeth: deep scallop serrations that grip and slice rather than press down. Crusty sourdough, soft sandwich loaves and ripe tomatoes all come off in clean sections, no squashing.

Why Serrated
Teeth Do the Cutting
A straight edge wedges down through a loaf and compresses everything under it. Serrations work differently. Each point bites the crust and the scallops between them slice the soft interior as you draw the blade back. Long strokes, almost no downward pressure. The 203mm length gives you room to clear a full loaf in two or three passes, and the 35mm blade height keeps your knuckles off the board.

Blade Construction
67 Layers Around a Cobalt-Alloy Core
The cutting core is 10Cr15CoMoV, a cobalt-bearing Japanese-style stainless, hardened to 60±2 HRC through vacuum heat treatment and a deep-freeze cycle. It's clad in 316/316L stainless folded into 67 Damascus layers, 33 each side around the core. Hardness here is chosen for a serrated edge: hard enough to hold the points sharp through years of crusty loaves, tough enough that the teeth don't chip.

In the Hand
Figured Sycamore, Full Tang
The handle is figured sycamore wood, set on a full tang and pinned with a mosaic brass rivet. At 193g the knife is light for its length, so the long sawing strokes a bread knife needs stay easy on the wrist. The 143mm handle gives a full grip for left or right hand.

FAQs
Can I sharpen a serrated bread knife on a whetstone?
Not like a straight edge. The points and scallops can't be honed flat on a stone or run through a pull-through sharpener. A serrated edge holds for years; when it eventually dulls it needs a tapered rod worked into each scallop, or professional servicing. For most home cooks this knife will outlast many straight blades between sharpenings.
Why is the blade serrated instead of straight?
Serrations are what let a bread knife saw through hard crust without crushing the soft crumb underneath. The points bite the crust and the scallops slice the interior on the draw stroke, so you cut with almost no downward pressure. A straight edge would compress the loaf as it pushed through.
Is this real Damascus steel?
Yes. The blade is 67 layers of Damascus, 33 layers of 316/316L stainless folded each side of a 10Cr15CoMoV cutting core. The pattern is forged into the steel, not etched on.
How long is the blade really?
The verified blade length is 203mm, around 8.5". Total length with handle is 353mm, and it weighs 193g.
Can it go in the dishwasher?
No. Hand wash only. Dishwasher heat, detergent and knocking against other items will damage the edge and dry out the sycamore handle. Wash by hand and dry straight away.
What handle is it and is the tang full?
Figured sycamore wood over a full tang, pinned with a mosaic brass rivet. The full tang runs the length of the handle for balance and strength.
What warranty does it carry?
A lifetime warranty direct from the brand, and xinzuo.com.au adds a 30-day money-back guarantee.
