HOW TO USE

A few passes, edge realigned

Hold the rod upright with the tip on a board, or angle it across your bench. Lay the blade near the handle against the rod at roughly the knife's edge angle, then draw it down and toward you so the whole edge passes the diamond surface. Repeat a few light passes on each side, alternating. You are realigning the edge, not grinding it, so let the rod do the work. Wipe the blade and you are back to a clean, biting edge.

Hand wash only, never the dishwasher. Wipe the rod clean of fine metal residue after honing and dry it before it goes away. Store it where the diamond surface will not knock against other steel. The figured Sycamore handle keeps best with an occasional wipe and a dry rest.

FAQs

Is this a sharpening rod or a honing rod?

It does both jobs. The diamond-coated surface realigns a rolled edge like a traditional honing steel, and because it is diamond-coated it also lightly refreshes the bite that a smooth steel cannot. For a fully blunt edge you still want a whetstone or a sharpener.

Does honing replace sharpening?

No. Honing realigns the existing edge between sharpenings and keeps a knife performing day to day. Over time the edge still wears and needs to be re-ground on a stone or sharpener. Think of the rod as maintenance, not a reset.

How long is the rod?

Nine inches of working rod, which comfortably covers full-length chef and slicing knives as well as smaller blades.

Will it work on knives other than Xinzuo?

Yes. The diamond-coated surface works on any kitchen knife, Japanese or German style. It is not limited to the Master Series.

How often should I use it?

A few passes per side before or after a prep session is enough for most home cooks. Light, regular honing beats waiting until a knife feels dull.

Can it go in the dishwasher?

No. Hand wash only, then wipe and dry. The Sycamore wood handle and the rod surface both prefer to be kept dry.
