5" Utility Knife - Master Series (B30)
The 5" Utility Knife fills the gap between your paring knife and your chef's knife. Long enough to slice a tomato or a sandwich roll in one pass, short and nimble enough for shallots, garlic and small vegetables. A 67-layer Damascus blade over a 10Cr15CoMoV core, ground to 15° per side, set into a figured sycamore handle. The everyday in-between knife you reach for more than you expect.
$85.95
DESCRIPTION
Reach for this when the chef knife feels like overkill. Halving cherry tomatoes, coring strawberries, trimming silverskin off a pork fillet, deveining prawns: five inches of blade gives you more control than eight ever could for these jobs. It won't replace the chef knife. It'll just quietly become the one you grab first for anything small.
The Daily Go-Between
The narrow blade slips under silverskin without dragging, and the pointed tip finds its way into a prawn without tearing the flesh. You get enough length to rock through herbs but enough control to stay precise on small fruit. The edge is ground to 60-62 HRC on a 10Cr15CoMoV core wrapped in 67 layers of Damascus, so it stays sharp through a full session of fussy prep work without needing a honing rod between tasks.
Figured Sycamore, Full-Tang Build
The figured sycamore handle has a dense, rippled grain that looks different on every piece. It sits well whether you're pinching the blade for strawberry work or using a full handle grip on the pork. One solid piece of steel runs from tip to butt, so the balance doesn't shift when you choke up close to the bolster for the fine stuff.

The knife between paring and chef
Every kitchen has a job that's too big for a paring knife and too small for a chef's knife. Slicing a tomato, splitting a bread roll, trimming a shallot, cleaning a clove of garlic. The 5" utility blade owns that middle ground. At 127mm it gives you reach without bulk, and at 115g it stays light in the hand for detailed work. Part of the Master Series, built from the same 67-layer Damascus steel as the rest of the range.

Why a utility knife
The everyday in-between blade
A 5-inch utility blade is the knife you reach for without thinking. It handles small and medium produce, sandwich work and detailed slicing that a big chef's knife makes clumsy. Built for finer items like shallots, garlic and small vegetables rather than chopping through hard ingredients.
- 127mm blade
- 115g light
- 15° per side
- Detailed slicing
The steel
67 layers over a 10Cr15CoMoV core
The blade is forged from 67 layers of Damascus steel folded around a 10Cr15CoMoV core, hardened to 60±2 HRC through vacuum heat treatment and deep freeze. The outer layers are 316/316L stainless cladding, 33 each side, finished in a raindrop Damascus pattern. The core does the cutting; the cladding and forging give it corrosion resistance and the visible pattern down the spine.

In the hand
Figured sycamore, full tang
The handle is figured sycamore wood, set on a full-tang blade and locked with mosaic brass rivets. Full tang means the steel runs the length of the handle for balance and durability. At 115g the knife stays nimble for the fine, repetitive work a utility knife is made for. Hand wash only, never the dishwasher.
