DESCRIPTION
This is the knife for everything with a crust. The 8 inch serrated blade pulls through a hard-baked sourdough, a crusty baguette, or a soft brioche bun without crushing the crumb underneath, and it handles ripe tomatoes and stone fruit when a straight edge would just slide off the skin.
67-Layer Damascus, Built to Stay Sharp
The blade is forged from a 10Cr15CoMoV high-carbon stainless core wrapped in 67 layers of Damascus steel, then vacuum heat-treated to 60-62 HRC. That hardness is where the bite comes from: the serrations keep grabbing crust after crust instead of dulling into a tear. Each blade carries its own flowing Damascus pattern, so it looks as considered as it cuts.
Rosewood Handle, Full Tang Control
The rosewood handle is built around a full tang and triple-riveted for a solid, balanced feel through a long sawing stroke. There is no flex and no rattle, just steady control as you guide the blade through a stubborn loaf.

YI SERIES
A Bread Knife That Saws, Not Squashes
The Yi Series B27 is the everyday workhorse of the range. A long serrated edge does the cutting so you don't have to press down, which means crusty loaves keep their shape and soft bread keeps its crumb. 67-layer Damascus cladding over a 10Cr15CoMoV core, hardened to 60 HRC, finished with a rosewood handle. Backed by a lifetime warranty against manufacturing defects.

WHY SERRATED
Teeth Do the Work
A bread knife works on a draw stroke. The serrations bite the crust and slice through it on the pull, so you let the blade glide instead of forcing it down. That keeps tall sourdough and soft sandwich loaves intact, and the same teeth grip the skin of a ripe tomato without slipping.
- 8.3 inch blade
- 235g

THE STEEL
67-Layer Damascus, 10Cr15CoMoV Core
The blade is built around a 10Cr15CoMoV cutting core, clad in 67 layers of Damascus steel for the rippled pattern and a tough, corrosion-resistant body. Hardened to 60±2 HRC through vacuum heat treatment and a deep-freeze cycle. Spine measures 2.2mm. Hand wash only.

FAQs
Can I sharpen a serrated bread knife?
Not on a whetstone or honing rod like a straight edge. Each serration has to be sharpened individually with a tapered ceramic or diamond rod, and bread knives hold their edge a long time, so most owners rarely need to.
Why shouldn't I press down when cutting bread?
Pressing crushes soft crumb and squashes the loaf. A bread knife is built for a long sawing draw stroke, so let the serrations and the blade's 235g weight do the cutting.
What can I cut besides bread?
Tomatoes, cakes, citrus and other soft-skinned or delicate foods. The serrations grip skins that a smooth blade would slide off.
Is the blade really Damascus?
Yes. It is 67 layers of Damascus steel clad over a 10Cr15CoMoV cutting core, hardened to 60±2 HRC.
Is it dishwasher safe?
No. Hand wash and dry it to protect the rosewood handle and the Damascus finish.
What is the handle made of?
Solid rosewood, secured with three rivets including a decorative mosaic accent rivet.
Does it come with a warranty?
Yes, a lifetime warranty against manufacturing defects.
