3.5" Paring Knife - Zhen Series (PM8O) - Xinzuo Australia

3.5" Paring Knife - Zhen Series (PM8O)

5.0 Stars (6 reviews)

A 3.5" paring knife built for the close work — peeling, trimming, segmenting, deveining. The blade is 67-layer Damascus folded around a 10Cr15CoMoV core, hardened to 60±2 HRC and ground to 15° per side. The octagonal wa handle in olive wood and black buffalo horn drops the balance point right under your pinch grip, so the tip goes exactly where your fingers send it.

DESCRIPTION

Reach for this when the knife leaves your hand and the food comes to you. Peeling an apple, deveining prawns, segmenting a blood orange, scoring the skin on a duck breast: these are in-hand jobs, and a 3.5-inch blade is the right size for all of them. You won't get the same control from a utility knife, and you definitely won't get it from a chef knife.

Built for In-Hand Work

The short blade stays inside your hand's field of vision while you're working. That's the whole point of a paring knife. You can feel where the tip is, guide it around seeds, and peel the skin off an apple in one continuous stroke without looking away. The full-tang pakka-wood handle is balanced for the lighter grip you use in-hand, not the pinch grip you need on the board. It won't feel nose-heavy mid-peel.

The Same Steel as the Bigger Blades

Don't let the size fool you. This is the same 67-layer Damascus build: 10Cr15CoMoV core, vacuum heat-treated to 60-62 HRC, wrapped in 67 layers of Damascus cladding. That hardness is what you want on a blade this small. A soft paring knife deflects mid-cut. This one holds its line through a whole session of deveining prawns or segmenting citrus, where the tip is doing fine, repetitive work on every piece.

Complete Your Set

Pair it with the Zhen 7" Santoku (PM8O-RS) for the board work this small blade isn't built for, and the Zhen 5" Utility Knife (PM8O-WY) for the in-between jobs where you want a blade that's off the hand but still compact.

The Knife Your Other Hand Reaches For

The Knife Your Other Hand Reaches For

Every kitchen runs two knives more than any other: the chef's knife and the paring knife. This is the Zhen paring — a 4-inch Damascus blade for the jobs too small and too precise for a big knife. Peeling apples in the hand, hulling strawberries, cleaning prawns, segmenting citrus, scoring dough. It carries the same 67-layer construction and olive wood and buffalo horn handle as the rest of the Zhen range, sized down for control.

Built for the Small Jobs

PRECISION IN HAND

Built for the Small Jobs

A short, stiff blade and a fine 15°-per-side edge make this knife disappear into close work. The point is acute enough to lift a vein from a prawn or core a tomato, and the spine stays rigid so the tip tracks straight when you cut toward your thumb. At a 4-inch blade it is short enough to control in the hand, off the board, where a paring knife earns its keep.

THE STEEL

67 Layers Around a 10Cr15CoMoV Core

The cutting core is 10Cr15CoMoV, a high-carbon stainless steel run to 60±2 HRC through vacuum heat treatment and a deep-freeze cycle for a fine, stable grain. That core is clad in 67 layers of folded Damascus, giving the flowing pattern down the blade. The result holds a keen edge through fine work and resists the staining a paring knife sees from acidic fruit and citrus.

Octagonal Wa, Olive and Horn

THE HANDLE

Octagonal Wa, Olive and Horn

The handle is a Japanese-style octagonal wa profile in olive wood with a black buffalo horn bolster. The eight flats index in the fingers so you always know where the edge is pointing — which matters most on a small knife used in a pinch grip. A full tang runs the length of the handle for balance and durability. Hand wash and dry; not dishwasher safe.

FAQs

What is a paring knife used for?

Small, precise jobs — peeling fruit and vegetables in the hand, trimming and coring, hulling strawberries, deveining prawns, and segmenting citrus. It handles the close work a chef's knife is too large for.

Is this a real Damascus blade?

Yes. The blade is 67 layers of folded Damascus steel clad around a 10Cr15CoMoV cutting core, which is what creates the flowing pattern down the blade.

How hard is the blade?

It is run to 60±2 HRC, set through vacuum heat treatment and a deep-freeze cycle for a fine, stable edge.

What angle is the edge?

15 degrees per side, a fine double bevel suited to the precise cuts a paring knife is made for.

What is the handle made of?

Olive wood with a black buffalo horn bolster, shaped in a Japanese octagonal wa profile. A full tang runs through the handle.

Can it go in the dishwasher?

No. Hand wash and dry it to protect the edge and the natural wood and horn handle.

Is it covered by a warranty?

Yes, a lifetime warranty against manufacturing defects.
