DESCRIPTION

Reach for this when the slow-roasted leg of lamb comes out of the oven, or you're working through a whole chicken for a Sunday dinner. A carving knife earns its keep in one moment: the long, clean forward pull that separates a slice of ham from the bone without pressing down or sawing back. That's what the narrow blade and the length are for.

Built for Long, Clean Strokes

The core is 12Cr18MoV high-carbon stainless steel, wrapped in 67 layers of Damascus. Vacuum heat-treated to 60-62 HRC, the edge cuts through cold roast beef or warm poultry without needing a touch-up mid-carve. The narrow profile reduces drag through dense proteins, so you're pulling the blade rather than pressing it. One forward stroke, one clean slice.

Ebony Handle, Full-Tang Build

Ebony is a dense, oily hardwood that stays secure in a two-handed grip when you're applying pressure on a long pulling stroke. The full-tang construction balances the knife back toward the hand rather than out at the tip, which keeps your wrist honest when you're carving a whole bird for a table of eight. It won't tire you out before the meal's on the plate.

Ji Series · X08

The slicing specialist for the carving board

The Ji Series carving knife is the long, narrow blade you reach for when a chef knife is the wrong tool. Ten inches of edge means the whole roast is covered in one draw — no second pass, no torn fibres, no ragged edge. Forged Damascus over a 12Cr18MoV core, finished with an ebony wood handle. A workhorse at the Sunday table and clean enough to plate from.

Why a carving knife

One stroke, edge to edge

A short chef knife forces you to saw — and sawing tears meat fibres, pushes out juice and leaves a torn face. A long, thin carving blade does the opposite: it travels the full length of the cut in one clean pull, so each slice comes off even and intact. The 10-inch blade and 15-degree-per-side edge are built for exactly this — turkey, ham, roast beef, brisket, whole poultry.

  • 10" / 250mm blade
  • 15° per side
  • Long single-stroke slices
  • Even carving-board slices

Blade

67-layer Damascus, 12Cr18MoV core

The blade is genuine Damascus — 67 layers folded around a 12Cr18MoV steel core, vacuum heat treated to 59-61 HRC. That hardness is tuned for a slicing knife: hard enough to hold a keen carving edge through a full roast, forgiving enough to touch up on a steel or stone. The layered Damascus pattern is structural, not printed.

In the hand

Ebony handle, full tang

The handle is solid ebony wood over a full tang that runs the length of the grip, so the knife stays balanced through long carving strokes and the weight sits where your hand controls it. Hand wash and dry only — no dishwasher. Backed by a lifetime warranty against manufacturing defects.

The difference

Why this knife

Ji carving knife

  • 10" blade covers the whole roast in one stroke

A chef knife for carving

  • Shorter blade forces a back-and-forth sawing motion
  • Taller, wider profile drags and tears meat fibres
  • Great for prep, but not for clean slicing
