The board self-heals, the surface stays smoother, and the edge takes less abrasion per cut. First, bamboo contains silica, the same mineral used in sandpaper, which acts as a fine abrasive on the edge. Second, bamboo boards are made by gluing strips together with phenolic resin, and the glue lines are noticeably harder than the bamboo fibre. Your blade hits softer, harder, softer, harder as it crosses the board. On a 60 HRC Japanese-grade blade you'll feel the dulling within a few weeks of daily use.

Bamboo is fine for sandwich assembly and serving cheese. For cutting that matters, get real wood.

Plastic has a real job

HDPE plastic boards do dull knives slightly faster than hardwood, but they have one advantage no wood board can match: they're dishwasher safe and you can sanitise them properly. For raw chicken, raw seafood, and allergen separation, plastic is the right call. Just expect to bin them every couple of years once the surface is so scarred that bacteria can hide in the grooves. How Do You Care for a Wood Cutting Board?

Wash with hot soapy water, towel dry, stand on its edge to air dry, oil it once a month for the first year and quarterly after that. Never put it in the dishwasher. Never let it soak in the sink. That's the whole maintenance routine and it takes about 90 seconds per oiling.

The longer version, because the details matter:

Daily wash. Hot water, dish soap, the rough side of a sponge if needed. Wood is naturally antibacterial, even without bleach. Pick the board to match how you actually cook on a typical week, not how you imagine you'll cook once you have nicer gear.

If you cook three to four nights a week, mostly vegetables and weeknight meals: One large end grain hardwood board, 450 by 305mm. Plus a small plastic for raw chicken nights. That's the setup for most Australian households.
