VG10 Steel Knives

VG10 is one of the most respected kitchen knife steels in the world, originally developed by Japan's Takefu Special Steel for high-performance cutlery. With a hardness of 60-61 HRC, it holds a sharp edge significantly longer than softer German steels while remaining easier to sharpen than harder powder steels. It's the sweet spot between edge retention and practical maintenance.

VG10 contains vanadium for wear resistance, cobalt for hardness at high temperatures, and molybdenum for corrosion resistance. This combination means VG10 knives resist rust in humid Australian kitchens while maintaining a keen edge through weeks of regular use between sharpenings.

Our VG10 knives appear across several series, including the Mo Series (67-layer Damascus clad) and the Retro Series. Each uses a VG10 core for the cutting edge, surrounded by softer cladding layers that protect the core from lateral stress.

Premium Japanese Steel Performance

VG10 knives represent one of the most respected steel grades in Japanese knife making, prized for the ideal balance of hardness, edge retention, and corrosion resistance. XinZuo knives use 10Cr15CoMoV steel, which is the Chinese equivalent of VG10, delivering the same cutting performance at a more accessible price point. Every blade is forged in Yangjiang, hardened to 60+ HRC, and ground to a 15-degree edge angle for surgical sharpness that VG10 steel is famous for. The 10Cr15CoMoV core is wrapped in 67 layers of Damascus steel in our premium lines, combining VG10-class performance with stunning visual patterns that make each blade unique. If you have been searching for VG10 kitchen knives that deliver genuine Japanese steel performance without the Japanese price tag, XinZuo is the answer. Our collection includes chef knives, santoku, nakiri, and complete knife sets, all built on this proven VG10-equivalent steel that professional and home cooks trust worldwide.
