The cutting core is 10Cr15CoMoV, a cobalt-and-molybdenum stainless tuned for a fine, hard edge. Hardened to 60±2 HRC through vacuum heat treatment and a deep-freeze cycle, it holds its edge through real prep and takes a keen 15-degree-per-side bevel. Sixty-seven layers of Damascus fold over the core, clad in 316L stainless for corrosion resistance.

The handle is burnt oak with a red G10 accent ring, fitted over a full tang that runs the length of the knife for rigidity and balance. It is real. Sixty-seven layers of steel are forge-folded around the 10Cr15CoMoV core, then acid-etched so the New Water Wave grain you see is the actual layering, not a print.

Is a 10 inch chef knife too big for home use?

Not for cooks who do volume. The longer edge clears a board in fewer passes. If most of your prep is small and you want a more compact knife, the 8 inch is the standard size.

What steel is the cutting edge?
