HOW TO USE IT

A Few Light Passes Per Side

Hold the rod vertically with the tip on a board, or horizontally away from your body. Lay the heel of the blade near the top of the rod at roughly the knife's edge angle, then draw it down and toward you in one smooth stroke so the whole edge passes the steel. Alternate sides, four to six light passes each, and finish with a wipe. Hone before a cooking session rather than after, and only sharpen on a stone when honing no longer restores the bite.

Hand-Wash and Dry

Hand-wash only and dry immediately — do not put it in the dishwasher. Wipe the rod down after use to clear any fine metal residue, and store it dry. The burnt oak handle benefits from the occasional drop of food-safe oil. Covered by a lifetime warranty.

Does a honing steel sharpen my knife?

No. A hone realigns the existing edge that has rolled over from use — it does not remove steel or create a new edge. When honing no longer restores the bite, sharpen on a whetstone, then go back to honing to maintain it.

How often should I use it?

Lightly and often. A few passes per side before each cooking session keeps the edge true. Most kitchens hone far more often than they sharpen.

What is the rod made of?
