It does almost everything a Western chef knife does, and it does most of those things better, with the trade-off that it needs slightly more careful handling.

What Is a Nakiri, and How Is It Different?
A nakiri is a dedicated vegetable knife. The name means "vegetable cutter," and that is what it has done for the last 300 years. The blade is dead flat from heel to tip, ends in a square corner with no point, and runs 165 to 180 mm long. There is no taper, no curve, no belly. Just a tall, rectangular blade with a Japanese-style edge ground at 10 to 15 degrees per side.
The nakiri is built for one cutting motion: the push-cut. You drop the blade straight down through the food with a small forward motion at the bottom of the stroke. The flat edge contacts the entire cutting board on every cut, which is what makes a nakiri feel so fast on vegetable prep. Every stroke moves the whole blade through the food at once. There is no pivoting, no rocking, no dead space at the tip.
What a nakiri cannot do is anything that needs a tip. You cannot pierce a tomato skin, score a fillet, pop an avocado pit, or tip-cut into a tight space. The blade ends in a square corner. You also cannot slice through bone, frozen food, or anything that involves lateral force, because the harder steel chips where softer Western steel would flex.

How Do the Specs Compare Side by Side?
The two knives share the same Japanese-grade steels and the same san mai construction. Where they differ is geometry: length, height, profile, and weight distribution. Those geometric differences drive everything that happens in the kitchen.
Two specs in that table do most of the work. The first is blade length: the gyuto is roughly 60 to 75 mm longer than the nakiri. That extra length lets the gyuto reach across larger ingredients (a whole capsicum, half a watermelon, a chicken breast) in a single stroke and gives you more board real estate for repositioning. The nakiri is shorter, so for the same job it needs more strokes, but it is more nimble on small ingredients and stores more easily on a magnetic rack.
The second is the tip. The gyuto has one. The nakiri does not. That single difference dictates which knife handles which jobs. With a pointed tip you can pierce, score, debone, peel garlic against the board, and pivot into corners. Without one, you cannot. The nakiri's square tip is great for the jobs the blade was designed for and useless for everything else.
Which Knife Is Faster on Pure Vegetable Prep?
The nakiri, by a clear margin on any task that involves repetitive cuts of the same shape. The flat blade contacts the entire cutting board on every push-cut, so each stroke moves the whole edge through the food at once. There is no pivoting through the curve, no dead space at the heel or tip. When you are slicing 30 spring onions or julienning a daikon, the nakiri sets up a steady rhythm that the gyuto's curve interrupts.
The physics here are not just opinion. Atkins, Xu and Jeronimidis (2004) measured cutting forces on flexible plant material and found that adding a small forward slicing motion to a downward press, at a slice-push ratio of around 3:1, reduced the required downward force to roughly one-tenth. The nakiri's flat profile naturally produces that motion on every stroke. With a gyuto, you get the slicing motion when you push-cut and lose it when you rock-chop, because rocking is mostly downward force.
The nakiri's taller blade also matters. At 50 to 60 mm of heel height, it gives you more knuckle clearance on the board than a gyuto's 45 to 52 mm, so you can chop fast without scraping your fingers. The wide blade face also doubles as a bench scraper. Mince a pile of garlic, lay the blade flat, and sweep it into the pan in one motion. Small thing, but it adds up over a 30-minute prep session.
Where the gyuto closes the gap is mixed prep. If you are dicing an onion, then breaking down a chicken thigh, then mincing parsley, the gyuto's tip and curve let you switch tasks without changing knives. The nakiri can mince herbs and dice onions, but it cannot pivot, score skin, or tip-cut. So a gyuto finishes a varied prep job faster than a nakiri does, even though the nakiri is faster on each individual vegetable subtask.
Which Knife Is the Better One-Knife Solution?
The gyuto, without question. It is the closest thing the Japanese-style knife world has to a do-everything blade. You can use it on vegetables, fish, boneless protein, herbs, and most fruit. You can rock-chop, push-cut, slice, dice, mince, pierce, and score. The pointed tip handles small precision work. The curved belly handles long sweeping cuts. The 8 to 9.5 inch length covers the full range from a single garlic clove to a whole pumpkin half (with the caveat that you should not actually split a whole pumpkin with one).
I have a gyuto on the magnetic rack at home and it does roughly 80% of my prep. The other 20% is split between a nakiri (when I am doing a big stir-fry or roast veg tray), a paring knife for fiddly work, and a heavy German-style chef knife as a beater for bone or frozen food. If I had to lose one knife from that lineup, the nakiri would go first. Not because it is worse, but because the gyuto can do everything the nakiri does, just slightly slower.
The reverse is not true. A nakiri cannot replace a gyuto. The moment you need to break down a chicken or pierce a tomato, the nakiri stops working and you have to swap to another blade. 10Cr15CoMoV is the steel I point most customers at. It is a Chinese-made high-carbon stainless with cobalt for hot hardness and molybdenum for edge stability, and the composition is near-identical to Japanese VG-10 (we wrote a full VG-10 vs 10Cr15CoMoV breakdown if you want the chemistry). It hits the sharpness ceiling that matters for vegetable work, holds an edge two to three times longer than German 1.4116, and is forgiving enough that you can keep it sharp without being a sharpening hobbyist.
14Cr14MoVNb is the upgrade. It is a powder-metallurgy stainless: the steel is atomised into a fine powder before being sintered into a billet, which gives a finer grain structure that takes a sharper apex and resists wear better than conventionally cast steel. Edge retention runs roughly two to three times longer again than 10Cr15CoMoV. The trade-off is it wants a whetstone for sharpening, not a pull-through.
ZDP-189 is a Japanese super-steel with around 3% carbon and 20% chromium, hardened to 65 to 67 HRC. We carry it in our Zhen Series chef knife and nakiri. Both knives use san mai (三枚, "three layers") construction, which is what stops a hard, thin Japanese-style blade from chipping the first time you torque it sideways in a pumpkin. The 67-layer and 73-layer Damascus numbers refer to those cladding layers. Each fold doubles the layer count and adds a thin barrier of structural toughness around the core. The wave pattern is functional, not just decorative, although it does also look good. A Lan Series 73-layer powder-steel blade has a different chip resistance profile to a Mo Series 67-layer 10Cr15CoMoV blade, and both are tougher than a monosteel knife at the same hardness would be.
Worth knowing: San mai is the reason you can buy a 64 HRC nakiri or gyuto for under $150 and not worry about it shattering. The hard core stays sharp. The soft cladding takes the hits. Stay off bone and frozen food and the blade will last decades.
Which One Should You Buy?
This is the call most articles dodge with a "depends on your cooking style" non-answer. Here is the actual decision tree, based on what a real customer's kitchen looks like.
The honest framing: the gyuto is the better one-knife solution and the nakiri is the better second knife. If you are unsure, get the gyuto first. Use it for a few months, see how much of your cooking is vegetables, and add a nakiri later if you find yourself reaching for the gyuto purely for veg prep night after night. How Do You Maintain a Nakiri or Gyuto?
Both knives need the same care, and it is not a lot. Hone the edge on a ceramic rod every few uses (a steel rod can microchip the harder Japanese-grade edge). Sharpen on a whetstone, ideally 1000 grit for setting the edge and 3000 grit for finishing, every two to four months with regular use. Hand wash and dry immediately. Never put it in the dishwasher. Five things will damage either knife: bone, frozen food, lateral twisting, the dishwasher, and storing loose with other utensils. The hard steel that holds the acute edge is the same steel that chips if you whack it sideways. One quick aside on sharpness, because both knives live or die on it. Wu et al. (2025) published a study in PNAS measuring aerosol release during onion cutting. The single-bevel professional cousin, the usuba, is still used in Japanese restaurant kitchens for the precise vegetable garnishing that defines kaiseki cuisine.
The gyuto is much younger. It emerged during Japan's Meiji Restoration (1868 onwards), when Western food (particularly red meat) entered Japanese kitchens for the first time in centuries. Swordsmiths who lost their livelihoods after the samurai class was dissolved turned their forging knowledge to kitchen cutlery. They took the French and German chef knife shape and rebuilt it with Japanese steel and Japanese forging techniques. That is the modern gyuto. It looks like a chef knife. It cuts like something else.
