7" Nakiri Knife - Lan Series (B37)

5.0 Stars (31 reviews)

The Lan Series Nakiri is built for vegetables. A tall, flat 7-inch blade meets the board edge-to-edge, so every push-cut goes clean through in one motion — no rocking, no half-cut ribbons holding on at the heel. The core is 14Cr14MoVNb powder steel, clad in 73 layers of Damascus and finished with an olive wood handle. Hardened to 62±2 HRC and ground to 15° per side, it keeps a fine edge through a full prep session.

Flat Edge, Full Contact

LAN SERIES · NAKIRI

Flat Edge, Full Contact

The Nakiri does one job and does it properly: vegetables. Its straight, squared-off profile sits flush against the board for the entire length of the cut, so onions, herbs and root veg fall away in clean slices instead of staying tethered at the back of the blade. The Lan Series pairs that geometry with a 73-layer Damascus blade over a 14Cr14MoVNb powder-steel core — a workhorse prep knife that earns its place on the board.

Built For The Way You Cut Veg

WHY A NAKIRI

Built For The Way You Cut Veg

At 54mm tall the blade gives you knuckle clearance and a wide face to scoop and transfer what you've chopped. The flat edge means no rocking — you lift, place and push straight down, and the cut finishes every time. It is the fastest tool in the kitchen for board-loads of vegetables.

Powder-Steel Core, 73-Layer Damascus

THE STEEL

Powder-Steel Core, 73-Layer Damascus

The cutting core is 14Cr14MoVNb powder steel — a fine, uniform grain that takes and holds a keen edge. It is clad in 73 layers of Damascus (SUS410 folded 36 layers per side) for the rippled pattern and a stainless, easy-care outer body. Vacuum heat treatment and a deep-freeze cycle bring it to 62±2 HRC, hard enough to stay sharp through long prep yet still field-sharpenable on a stone.

Olive Wood, Full Tang

IN THE HAND

Olive Wood, Full Tang

The handle is olive wood — dense, warm-toned and grippy when wet — set on a full-tang blade and secured with copper flower rivets for balance through the pinch grip. At 250g the knife has enough mass to drop through dense veg on its own, without feeling top-heavy over a long board session. A 2.1mm spine keeps it nimble.

FAQs

What is a Nakiri knife used for?

It is a Japanese vegetable knife. The tall, flat, squared-off blade makes full contact with the board, so you push straight down and the cut releases cleanly — ideal for slicing, dicing and fine herb work in volume.

Why a flat edge instead of a curved one?

A flat edge keeps the whole blade on the board through the cut, so nothing stays attached at the heel. You lift and push rather than rock, which is faster and more uniform for vegetables.

Is this a real Damascus blade?

Yes. It is 73 layers of genuine Damascus — a 14Cr14MoVNb powder-steel cutting core clad in SUS410 stainless, 36 layers folded each side, for the visible rippled pattern.

How hard is the steel?

62±2 HRC, achieved through vacuum heat treatment and a deep-freeze cycle. That holds a fine edge through long prep while still sharpening readily on a whetstone.

What is the handle made of?

Olive wood on a full-tang blade, fixed with copper flower rivets. It is dense, warm-toned and stays grippy when wet.

Can it go in the dishwasher?

No. Hand wash and dry it after use — dishwasher detergent and heat damage both the edge and the olive wood handle.

What is the edge angle?

15° per side (15°±1), a double bevel. It is a fine, vegetable-ready edge that you can maintain with a 1000/6000 whetstone.

Does it come with a warranty?

Yes, a lifetime warranty, and it ships in an exquisite handmade gift box.
