DESCRIPTION

Reach for this when you've pulled a slow-roasted leg of lamb out of the oven, or you're working your way through a whole Thanksgiving turkey. A 10-inch carving knife is narrow for a reason -- it gets in between the bone and the flesh cleanly, and the length lets you slice a whole ham in a single forward pull instead of sawing through it.

Built for Long, Clean Strokes

The narrow blade reduces drag through dense proteins, so you're pulling rather than pressing. The 67-layer Damascus wraps a 10Cr15CoMoV high-carbon stainless core that's vacuum heat-treated to 60-62 HRC. That hardness lets the edge cut through cold roast beef or warm poultry without needing to be resharpened halfway through carving.

Figured Sycamore, Full-Tang Build

The handle is figured sycamore, a dense hardwood with visible rippled grain. It's wide enough to give a secure grip when you're applying pressure for a long pulling stroke, and the full-tang construction keeps the balance back toward the hand rather than out at the tip. Less wrist fatigue when you're carving a whole bird for a table of eight.

Built for one long, clean stroke

MASTER SERIES (B30)

Built for one long, clean stroke

The Master series carving knife trades the height of a chef knife for length and a narrow profile. That geometry is what lets the edge travel the full width of a roast or turkey breast in a single draw, instead of sawing back and forth and shredding the fibres. A 67-layer Damascus blade over a 10Cr15CoMoV core does the cutting; figured Sycamore does the holding.

Length and a narrow blade do the work

WHY A CARVING KNIFE

Length and a narrow blade do the work

A chef knife is tall and short, made for board work and rocking cuts. A carving knife is the opposite: long and lean, so the edge clears the meat in one pass and the thin spine reduces drag through the cut. The result is even, presentable slices off the bone or out of the centre of a roast, the kind a chef knife struggles to deliver without multiple strokes.

  • 10 inch blade
  • Narrow profile
  • Single-stroke slicing
  • Less tearing
67-layer Damascus, 60HRC core

THE STEEL

67-layer Damascus, 60HRC core

The cutting edge is a 10Cr15CoMoV stainless core, hardened to 60 plus or minus 2 HRC through vacuum heat treatment and a deep-freeze cycle. It is clad in 67 layers of Damascus, with 316/316L stainless folded 33 times each side. The high-carbon core holds a keen edge through a whole roast; the stainless cladding resists the acids and juices that carving releases.

Figured Sycamore, full tang

IN THE HAND

Figured Sycamore, full tang

The handle is figured Sycamore wood over a full tang that runs the length of the grip. At 210g the knife is light enough to control through a long pull but balanced toward the blade so the edge, not your wrist, does the slicing. Hand wash and dry only; this is not a dishwasher knife.

The difference

Why this knife

Master B30 Carving Knife

  • Long 10" narrow blade clears the cut in one stroke
  • 67-layer Damascus over a 10Cr15CoMoV core
  • Hardened to 60HRC, ground 15 degrees per side
  • Full tang in figured Sycamore

Using a chef knife to carve

  • Tall, short blade made for board work, not long slices
  • Edge does not span a roast, so you saw back and forth
  • More tearing and uneven slices on cooked meat
  • Wrong tool stalls at the carving board

FAQs

What is the blade length?

The blade measures 10 inches (254 mm) - a long, narrow profile built for clean, full-length slices.

Is this a real Damascus blade?

Yes. It is 67 layers of Damascus steel folded over a 10Cr15CoMoV stainless core, with 316/316L stainless cladding 33 layers each side.

How hard is the edge?

The blade is hardened to 60 plus or minus 2 HRC using vacuum heat treatment and a deep-freeze cycle, then ground to 15 degrees per side.

Why use a carving knife instead of my chef knife?

A carving knife is longer and narrower, so it clears the full width of a roast in one stroke. A chef knife is tall and short and forces you to saw, which tears cooked meat.

Can I put it in the dishwasher?

No. Hand wash and dry only. Dishwasher detergents and heat damage both the edge and the Sycamore handle.

What handle does it have?

Figured Sycamore wood over a full tang that runs the full length of the grip.

What is the warranty?

A lifetime warranty direct from the brand, and xinzuo.com.au adds a 30-day money-back guarantee.
