Sized for the jobs a chef's knife fumbles

A 125mm blade is the sweet spot for control. It tracks straight through a tomato without crushing it, peels and segments fruit in the hand, and slices a cooked chicken breast clean — all the tasks where a 200mm chef's knife is unwieldy and a 90mm parer runs out of edge. Ground to 15° per side, it stays nimble for precise work while holding enough length for proper slicing strokes.

67 layers around a hard cutting core

The Yu blade is built on a 10Cr15CoMoV core jacketed in 67 layers of Damascus steel, cold-folded into a raindrop pattern. The core is taken to 60±2 HRC through vacuum heat treatment and a deep-freeze cycle, so the edge bites hard and holds. Cladding layers absorb shock and give the blade its flowing surface. Result: a thin, keen edge with the toughness to survive everyday bench work.

Rosewood, contoured and full tang

The handle is solid rosewood, shaped to fill the palm and run full tang through the scales for balance and rigidity. At 112g the knife is light enough for the rapid in-and-out work a utility knife does all day, with the weight sitting forward of the bolster so the edge does the cutting. Hand wash and dry — the Damascus blade and rosewood are not dishwasher safe.

Is the Yu utility knife real Damascus?

Yes. The blade is 67 layers of genuine Damascus steel cold-folded around a 10Cr15CoMoV core, finished in a raindrop pattern. The layers are forged, not etched on.

How is a utility knife different from a paring or chef's knife?

At 125mm it sits between them. It is longer than a paring knife so it can slice sandwiches, tomatoes and small roasts, but shorter and more agile than a chef's knife, so it handles trimming and in-hand work the bigger blade can't.

How hard is the blade and how sharp is the edge?

The core is hardened to 60±2 HRC via vacuum heat treatment and a deep-freeze cycle, and the edge is ground to 15° per side — keen enough for clean slicing and hard enough to hold that edge through daily use.

What is the handle made of?
