Vegetable Prep: Dicing onions, mincing garlic, and slicing carrots with precision.
Fruit Preparation: Peeling, coring, and segmenting fruits with ease.

Yu Series

The Nimble All-Rounder

The Yu Series is Xinzuo's clean, classic Damascus line. This 5-inch santoku is the compact workhorse of the range: short enough to feel agile for herbs, garlic and small veg, long enough to handle the daily run of onions, capsicum and proteins. A real 67-layer Damascus blade over a 10Cr15CoMoV core, run to 60±2 HRC, paired with a rosewood handle. Premium build, sensible size.

Why A Santoku

Flat Profile, Clean Push Cuts

The santoku's flat-ish edge keeps full contact with the board, so push cuts land cleanly without rocking. At 5 inches it stays light and controllable, the kind of knife you reach for without thinking. The 15° per-side edge slices rather than wedges, giving you thin, even slices through veg and boneless proteins.

The Steel

67 Layers Over A Hard Core

The blade is forged from 67 layers of Damascus steel folded around a 10Cr15CoMoV core, hardened to 60±2 HRC through vacuum heat treatment and deep-freeze. The core is what holds the edge; the outer cladding is 316/316L stainless Damascus, 33 layers each side, for corrosion resistance and the Raindrop pattern you see along the flat. Hard enough to stay sharp, tough enough for daily use.

FAQs

Is this a real Damascus blade?

Yes. It's forged from 67 layers of Damascus steel folded around a 10Cr15CoMoV core, with the Raindrop pattern visible along the flat. The pattern is in the steel, not etched on.

How hard is the blade?

It's run to 60±2 HRC through vacuum heat treatment and a deep-freeze process, which balances edge retention with toughness for daily use.

What is the edge angle?

15° per side (15°±1), a finer angle that slices cleanly rather than wedging through food.

Why choose a 5-inch santoku over a larger one?

The shorter 125mm blade is lighter and more nimble for everyday prep, fine work and smaller hands or boards. A larger santoku gives you more length for big veg but less agility.

Can it go in the dishwasher?

No. Hand wash and dry only — dishwashers damage both the Damascus steel and the rosewood handle.

What handle does it have?

Solid rosewood over a full tang, so the steel runs the full length of the knife for balance and durability.

Is it covered by a warranty?

Yes, a lifetime warranty against manufacturing defects.
