The 178mm blade runs flatter than a chef's knife, so it sits flush to the board through a push cut and minces without the rocking arc. At 50mm tall it gives knuckle clearance and a broad face for scooping. Nimble enough for everyday prep, with enough belly to handle a full board of vegetables.

The cutting core is 10Cr15CoMoV, hardened to 60±2 HRC through vacuum heat treatment and a deep-freeze cycle for a stable, fine grain. Folded around it are 67 layers of Damascus in a raindrop pattern. The edge is ground to 15° per side and runs a double bevel, so it suits left and right hands alike. Hard enough to hold a keen edge, forgiving enough to resharpen at home.
