The cutting core is 10Cr15CoMoV, hardened to 60±2 HRC through vacuum heat treatment and a deep-freeze cycle for a stable, fine edge. It is clad in 67 layers of Damascus that surface as a raindrop pattern down the blade. Ground to 15° per side, it bites cleanly through onion skin, tomato and tight-packed cabbage without crushing.

No. The Yu Series is a Chinese vegetable cleaver (caidao) for slicing, dicing and mincing. Chopping bone can chip the 15° edge and is outside its intended use.

Is it real Damascus?

Yes. The blade is 67 layers of Damascus steel forge-welded around a 10Cr15CoMoV core, finished in a raindrop pattern.

How hard is the blade?
