DESCRIPTION

Reach for this when you're shaving fennel paper-thin or slicing a zucchini into even coins on a small board where an 8-inch blade is just too much knife. The 5" Santoku is the shorter, more nimble version of the Mo Series workhorse. Same push-cut flat profile. Smaller footprint, more control in tighter spaces.

The Santoku Advantage

The flat belly is what makes a santoku a santoku. Instead of rocking, you push straight down through cucumber rounds or capsicum strips and lift cleanly off the board. At 5 inches this one is especially direct: your hand stays close to the board, and the tip doesn't hang over the edge of the food before the heel reaches the board. It's the knife you'll grab for prep work where a longer blade feels heavy and imprecise.

Damascus Steel, Burnt Oak Handle

The core is 10Cr15CoMoV high-carbon stainless, wrapped in 67 layers of Damascus and vacuum heat-treated to 60-62 HRC. That edge holds through a prep session rather than dulling on the third capsicum. The burnt oak handle with its red G10 accent ring sits firmly in a pinch grip whether you're doing fast coin cuts or slow deliberate slices. Full-tang construction means the weight doesn't shift when you press down through something dense.

A Nimble 5-Inch Santoku

MO SERIES X06

A Nimble 5-Inch Santoku

The Mo series santoku is built for control. At 5 inches it sits between a petty and a full santoku, light in the hand at the front of a chopping board. The flat-ish profile rewards push cuts and clean downward chops, while the short blade keeps fine dicing and herb work tight and precise. A genuine 67-layer Damascus blade, not a print, with the dark water-wave pattern carried under a black titanium stonewash.

The All-Rounder That Earns Its Spot

WHY A SANTOKU

The All-Rounder That Earns Its Spot

Santoku means three virtues: meat, fish and vegetables. The flat profile means the edge meets the board along its full length, so push cuts shear cleanly without the rocking a Western chef's knife needs. At 5 inches this one trades reach for agility, ideal for smaller hands, smaller boards and the precise prep most home cooks do most. The thin 2.3mm spine keeps it light and lets it glide through dense vegetables.

67 Layers Around a Cobalt Core

BLADE & STEEL

67 Layers Around a Cobalt Core

The cutting core is 10Cr15CoMoV, a cobalt-bearing stainless steel hardened to 60 plus or minus 2 HRC through vacuum heat treatment and a deep-freeze cycle. That sits in a sweet spot, hard enough to take and hold a keen edge, forgiving enough to resist chipping in a working kitchen. Around the core are 67 folded Damascus layers, finished in the New Water Wave black titanium stonewash for a dark, low-glare face.

Burnt Oak, Full Tang

IN THE HAND

Burnt Oak, Full Tang

The handle is burnt oak, the grain darkened and sealed for grip and water resistance. It runs to a full tang for balance and durability, so the weight sits where your pinch grip wants it. Light at 138 grams, the Mo santoku feels quick rather than heavy, the kind of knife you reach for without thinking.

FAQs

Is this a real Damascus knife?

Yes. The blade is genuinely forged from 67 folded layers around a 10Cr15CoMoV core, not a printed or etched pattern. The dark water-wave figure sits under a black titanium stonewash finish.

What is the blade steel and hardness?

The cutting core is 10Cr15CoMoV, a cobalt-bearing stainless steel, hardened to 60±2 HRC via vacuum heat treatment and a deep-freeze cycle.

How sharp is the edge?

It is ground to 15 degrees per side, a keen angle suited to push cuts and fine prep. Regular honing keeps it at its best.

Why choose a 5-inch santoku over a larger one?

The shorter blade is more nimble and precise for everyday dicing, herb work and smaller boards, while keeping the flat santoku profile that excels at clean push cuts.

Is it dishwasher safe?

No. Hand-wash only and dry immediately. Dishwashers will damage both the Damascus blade and the burnt oak handle.

What handle does it have?

A burnt oak handle on a full tang, darkened and sealed for grip and water resistance, with the weight balanced toward your pinch grip.

Is there a warranty?

Yes, it carries a lifetime warranty against manufacturing defects.
