This is the "Cai Dao" (Chinese Chef Knife), refined for the modern kitchen. Unlike a meat cleaver, this blade is thin, sharp, and designed for precision vegetable work. It allows you to chop, slice, and mince with incredible speed, then use the wide blade to scoop up your prep and drop it straight into the pan.
The tall, flat blade profile is perfect for guiding your knuckles safely while you chop. Constructed with a 10Cr15CoMoV steel core and 67 layers of Damascus cladding, this blade offers edge retention that standard cleavers can only dream of. Note: This is a precision slicing tool, not a bone crusher. Please keep it away from frozen foods and bones!

Knife Design
The Mo Series blade features an acid-etched, battle-forged Damascus pattern with a black titanium water-wave stonewash, delivering striking visual artistry, reduced food adhesion, and durable, performance-driven elegance in every cut.
The Mo Series handle blends burnt white oak with bold red G10, delivering a refined, durable aesthetic that is ergonomic, moisture-resistant, exceptionally comfortable in extended use, stable under pressure, and a superior upgrade over plain wooden handles.
The Mo Series combines a VG10 steel core with 67 layers of Damascus cladding. VG10 is one of the most popular kitchen knife steels in the world, developed by Japan's Takefu Special Steel. The 67-layer Damascus isn't just visual, it adds corrosion resistance and helps food release from the blade surface.
VG10 achieves 60-61 HRC compared to 56-58 HRC for typical German steels. This means it holds a sharper edge significantly longer. However, it's slightly more brittle and requires a whetstone rather than a pull-through sharpener. For cooks who want maximum sharpness and don't mind careful maintenance, VG10 is the better choice. The Damascus pattern is permanent and won't wash off with normal use. To keep it looking its best: hand wash immediately after use, dry thoroughly, and avoid prolonged contact with acidic foods (lemon, tomato) which can cause temporary discolouration.
