7.3" Butcher's Cleaver - Mo Series (X06)
67-layer Damascus chef knife ensuring exceptional sharpness, balanced control, and lasting performance for slicing, chopping, and dicing.
$169.95
DESCRIPTION
When finesse isn't enough, you need force. The MO Series Bone Chopper is the muscle of the family. While the rest of the series is designed for laser-sharp slicing, this tank is built to smash through chicken carcasses, pork ribs, and thick-skinned pumpkins without batting an eyelid.
Built for Impact
Unlike the rest of the MO series, this blade is crafted from 7Cr17MoV stainless steel. We chose this steel specifically for the chopper because it is tougher and more impact-resistant than the harder Damascus steel found on our slicing knives. This means it can absorb the shock of hitting bone without chipping.
Signature Comfort and Control
Swinging a heavy blade requires a secure grip. The signature MO series handle is crafted from deep, burnt oak, shaped to prevent the knife from slipping during heavy work. An elegant red G10 accent ring ensures that even your heavy-duty tools look stunning on the magnetic rack.
- Blade Steel: 7Cr17MoV Stainless Steel (Impact Resistant)

FAQs
What makes the Mo Series special?
The Mo Series combines a VG10 steel core with 67 layers of Damascus cladding. VG10 is one of the most popular kitchen knife steels in the world, developed by Japan's Takefu Special Steel. The 67-layer Damascus isn't just visual, it adds corrosion resistance and helps food release from the blade surface.
Is VG10 steel better than German steel?
VG10 achieves 60-61 HRC compared to 56-58 HRC for typical German steels. This means it holds a sharper edge significantly longer. However, it's slightly more brittle and requires a whetstone rather than a pull-through sharpener. For cooks who want maximum sharpness and don't mind careful maintenance, VG10 is the better choice. See our steel hardness guide for more detail.
How do I care for the Damascus pattern?
The Damascus pattern is permanent and won't wash off with normal use. To keep it looking its best: hand wash immediately after use, dry thoroughly, and avoid prolonged contact with acidic foods (lemon, tomato) which can cause temporary discolouration. Over time, a natural patina may develop that actually enhances the pattern contrast. See our Damascus care guide.
What handle material does the Mo Series use?
The Mo Series features a pakkawood handle. Pakkawood is an engineered wood laminate that combines the beauty of natural wood grain with superior moisture resistance. It won't crack or warp in humid conditions and provides a secure, comfortable grip during extended cooking sessions.
Is the Mo Series a good gift?
The Mo Series is our most popular gift choice. The striking Damascus pattern makes an immediate visual impression, while the VG10 performance ensures the recipient will use it daily. Each knife comes in a premium gift box. See our kitchen knife gift guide for pairing suggestions.
