When finesse isn't enough, you need force. The MO Series Bone Chopper is the muscle of the family. While the rest of the series is designed for laser-sharp slicing, this tank is built to smash through chicken carcasses, pork ribs, and thick-skinned pumpkins without batting an eyelid.

Built for Impact

Unlike the rest of the MO series, this blade is crafted from 7Cr17MoV stainless steel. We chose this steel specifically for the chopper because it is tougher and more impact-resistant than the harder Damascus steel found on our slicing knives. This means it can absorb the shock of hitting bone without chipping.

Signature Comfort and Control

Swinging a heavy blade requires a secure grip. The signature MO series handle is crafted from deep, burnt oak, shaped to prevent the knife from slipping during heavy work. An elegant red G10 accent ring ensures that even your heavy-duty tools look stunning on the magnetic rack.

This is a heavy kitchen cleaver. It sections whole chickens, splits poultry through the joint, trims cartilage and breaks down hard squash, pumpkin and root vegetables. Let the blade's own weight do the work — a controlled chop, not a swing. It is not a butcher's bone axe for large beef or pork bones; keep it to poultry, cartilage and produce and the edge stays keen.

The core is 10Cr15CoMoV, clad in 67 layers of Damascus for a rippled, wave-pattern face. Hardened to 60±2 HRC through vacuum heat treatment and a deep-freeze cycle, the edge holds well and resists chipping under load. Cobalt and molybdenum in the alloy add toughness — the right trade-off for a blade that chops, not just slices.

A full tang runs the length of the oak burnt handle, putting steel behind every chop and keeping the balance forward where a cleaver wants it. The burnt-oak finish gives a warm, grippy hold. FAQs

Can this cleaver chop through bone?

It handles poultry bones, joints and cartilage well. It is not built for large beef or pork bones — for those you want a dedicated butcher's bone axe. Keep it to poultry, cartilage and hard produce.

Is it a meat cleaver or a vegetable cleaver?

Both, within reason. The weight and tall blade section poultry and split joints, and the same face powers through dense pumpkin, squash and root veg. It is a heavy meat-and-veg cleaver rather than a thin Chinese vegetable cleaver.

Is the blade real Damascus?

Yes. It is 67 layers of Damascus forged around a 10Cr15CoMoV steel core, with a 316L stainless cladding, giving the rippled wave pattern on the face.

How hard is the steel?

60±2 HRC, set by vacuum heat treatment and a deep-freeze cycle. That balances a keen edge with the toughness a chopping blade needs.

What is the handle made of?

An oak burnt handle over a full tang, so steel runs the full length of the grip for strength and forward balance.

How do I care for it?

Hand-wash and dry it straight after use — it is not dishwasher safe. Hone the 15° edge as needed and store it dry.
