Teeth do what a straight edge can't

A straight knife relies on downward pressure to break a crust, and that pressure squashes the crumb. Serrations work differently — each tooth concentrates force on a point and bites in, so a light back-and-forth saw cuts cleanly through a hard crust and lands soft slices intact. The trade-off: a serrated edge can't be honed on a steel or stropped like a straight blade, so treat the edge gently and it will stay keen for years.

The cutting core is 14Cr14MoVNb powder steel, hardened to 62±2 HRC through vacuum heat treatment and a deep-freeze cycle. It's clad in 73 layers of Damascus — SUS410 stainless folded over the core — for the rippled pattern and a corrosion-resistant outer skin. High hardness matters even on a serrated edge: the teeth hold their shape through thousands of crusts.

Why a serrated edge instead of a straight one?

Serrations let the knife saw through hard crust without pressing down, so the soft crumb keeps its shape. A straight edge needs downward force that crushes bread.

Can I sharpen or hone this bread knife?

Not like a straight blade. A serrated edge can't be honed on a steel or whetstone the normal way — the teeth keep their bite for a long time on their own. Treat the edge gently and it stays keen for years.

What steel is the blade?

A 14Cr14MoVNb powder-steel core clad in 73 layers of Damascus (SUS410 stainless), hardened to 62±2 HRC.

What's the handle made from?
