Is this santoku Damascus steel?

No. It is a solid German 1.4116 (X50CrMoV15) stainless blade — one consistent steel, no Damascus layering and no cladding. The patterned look of Damascus is not part of this knife.

What is the blade hardness?

56-58 HRC, achieved with vacuum heat treatment. That range is chosen for corrosion resistance and easy resharpening, which suits a daily-use santoku.

How sharp is the edge out of the box?
