This is a solid German 1.4116 (X50CrMoV15) blade — a single, fully stainless steel, not a clad san-mai or Damascus knife. Vacuum heat treatment takes it to 56-58 HRC: a touch softer than Xinzuo's powder-steel knives, and that's the point — it shrugs off chips, tolerates the board, and comes back to a keen 15° edge with a few strokes on a steel or stone. Hand wash only.

FAQs

Is the X02 Cai Dao a bone cleaver?

No. At 2.2mm thick and 56-58 HRC it's a thin slicing-and-chopping cleaver for vegetables and boneless meat. Use a dedicated heavy bone cleaver for bone, joints or frozen food.

What can I actually cut with it?

Vegetables, herbs, garlic, ginger, boneless meat and poultry. It rock-chops, push-cuts and slices, and the broad flat crushes garlic and scoops prep off the board.

Is the blade Damascus?

No. This is solid German 1.4116 (X50CrMoV15) monosteel — a single stainless steel with no Damascus pattern or san-mai cladding.

How hard is the steel?

56-58 HRC. That's deliberately on the forgiving side, so the edge resists chipping and re-hones quickly on a steel or stone.

What's the edge angle?

15±1° per side, which is keener than a typical Western cleaver and gives cleaner cuts through vegetables.

Is it dishwasher safe?

No — hand wash and dry it. The red wood handle and stainless blade both prefer hand washing.

How heavy is it?
