5" Steak Knife - Supreme Series (X02)

4.74 Stars (80 reviews)

The 5" Steak Knife from the Supreme Series is a forged table knife built for steak and the plate it lands on. The blade is German 1.4116 stainless steel, ground to a fine 15° per side edge so it parts a seared crust cleanly instead of sawing through it. Red wood scales with visible stainless rivets give it weight in the hand and presence on the table. Sized at 5 inches, it is the steak knife you set out for guests and reach for every night.

DESCRIPTION

Reach for this when the main course hits the table. A proper steak knife does something a dinner fork and a blunt table knife can't: it lets you cut a rested ribeye or a lamb cutlet cleanly, without sawing back and forth and dragging the juices out of the meat. The 5-inch blade is exactly right for at-table work -- short enough to be precise, long enough to clear a thick cut of beef in two clean strokes.

At-Table Performance

German 1.4116 (X50CrMoV15) stainless steel takes a keen edge and it holds through a long Sunday lunch without needing a touch-up halfway through. That's 56-58 HRC -- softer than a Japanese blade but tough enough not to chip on bone, and easy to bring back on a standard honing rod. You won't find yourself hunting for a sharper knife at the table after you've used this one.

Red Wood Handle, Built for the Hand at Dinner

The red wood handle is balanced for a dinner-table grip rather than a prep grip -- lighter and more relaxed than a chef knife, which is exactly what you want when you're cutting individual portions rather than breaking down a whole protein. The full-tang construction keeps the weight even from blade to butt, so it doesn't tip forward when you're doing the lighter, more precise cuts that plated food calls for. Stainless steel rivets and a clean, traditional look that won't feel out of place next to a proper wine glass.

Edge & Presentation

Cuts Steak Clean, Looks the Part

A steak knife does two jobs: it has to slice a rested steak without tearing, and it has to look right next to the plate. This one is ground to 15° per side for a keen, controlled edge that glides through a seared crust, and the red wood handle with stainless rivets gives the table setting a finished, considered feel. Heavy enough to feel deliberate, fine enough to feel sharp.

The Steel

German 1.4116 Stainless, 56-58 HRC

The blade is solid German 1.4116 (X50CrMoV15) — a chromium-rich stainless that is the standard steel for quality European table and kitchen knives. It is hardened to 56-58 HRC under vacuum heat treatment: soft enough to shrug off the knocks and acidity of table use, hard enough to hold a fine edge through a meal. This is monosteel, not San Mai or Damascus — one consistent steel from spine to edge, easy to re-sharpen at home.

Red Wood, Stainless Rivets

In the Hand

Red Wood, Stainless Rivets

The handle is red wood, set with stainless steel rivets that sit flush through the scales for a clean, classic table-knife look. At roughly 123g the knife has real heft in the hand — it sits balanced when you cut and feels substantial when a guest picks it up. The 2.2mm spine keeps the blade slim and the profile elegant rather than bulky.

The difference

Why this knife

Xinzuo Supreme Steak Knife

  • Forged German 1.4116 stainless, a proven table-knife steel
  • Ground to 15° per side for a genuinely sharp edge
  • 56-58 HRC, vacuum heat treated to hold its edge
  • Red wood handle with stainless rivets — looks right on the table
  • Easy to re-sharpen at home, monosteel throughout

Generic Serrated Steak Knife

  • Stamped, thin stainless with a serrated edge that tears rather than slices
  • Serrations can never be properly re-sharpened — bin it when blunt
  • Light, hollow-feeling handle that reads cheap at a place setting
  • No stated steel grade or hardness
  • Looks like cutlery, not a knife

FAQs

Is this steak knife serrated?

No. It has a fine straight edge ground to 15° per side. A plain edge slices a rested steak cleanly without tearing, and it can be re-sharpened at home — serrated knives cannot.

What steel is the blade?

Solid German 1.4116 (X50CrMoV15) stainless steel, hardened to 56-58 HRC with vacuum heat treatment. It is monosteel — one consistent steel throughout, not San Mai or Damascus.

Is this a Damascus knife?

No. The Supreme Series is solid German 1.4116 stainless with a clean satin finish, not a layered Damascus blade. It delivers a sharp, durable table edge without the Damascus price.

Can I put it in the dishwasher?

No — hand wash only. Dishwasher heat, detergent and knocks dull the edge and damage the red wood handle. Wash by hand and dry it, and it will last for years.

How long is the blade?

The blade is 5.0 inches — the standard, comfortable length for a table steak knife, long enough to cut a full steak and short enough to control easily.

What does the handle feel like?

The handle is red wood with flush stainless steel rivets, weighting the knife at around 123g. It has real heft and a classic, considered look that suits a proper place setting.

Does it come ready to give as a gift?

Yes. It ships in a Xinzuo gift box, so it is ready to give on its own or to build out a matching set of steak knives.
