4.74 Stars (80 reviews)

A 10.5-inch serrated bread knife built to slice, not crush. The long German 1.4116 blade runs deep pointed serrations that bite through hard crust and glide through soft crumb in a single clean pass — sourdough, baguettes, ciabatta, even soft tomatoes and sponge cakes. Red wood handle with a safety S-curve at the heel for a stable, protected grip. Made in Yangjiang, the City of Knives.

DESCRIPTION

Reach for this when you're cutting a full-length sourdough batard and your 8-inch bread knife keeps running out of room before the end of the loaf. An extra two inches sounds trivial until you're pushing a knife back and forth through a Pullman loaf or a thick round country loaf and the blade keeps clipping the bench. Ten inches clears a full batard in two or three smooth strokes without your knuckles touching the board.

Built for Long Loaves

The serrated edge grips the crust on the first stroke, so you're not dragging and compressing the crumb before the blade bites through. German 1.4116 (X50CrMoV15) stainless steel holds that edge through weeks of regular use without needing a whetstone, and it won't rust if you forget to dry it promptly. The blade is long enough to slice a wide Pullman in a single clean pass and stiff enough to track straight through a dense whole-grain loaf that wants to bounce under the knife.

Red Wood Handle, Full-Tang Balance

The red wood handle is secured with stainless steel rivets, and the full-tang construction keeps the weight centred rather than tipping toward the blade on a long loaf. The grip is comfortable for the long, low-pressure strokes that bread cutting calls for. It sits right whether you're using a proper sawing motion on a thick crust or almost no pressure at all on a soft enriched dough.

Cuts Crust Without Crushing the Loaf

Why Serrations

Cuts Crust Without Crushing the Loaf

A straight edge skids on hard crust and then squashes the soft inside. The pointed serrations on this 215mm blade grip and saw through crust first, so the loaf holds its shape instead of compressing under the knife. The extra length means full slices of a wide sourdough or baguette in one clean draw — no second sawing pass that leaves ragged edges.

  • 215mm blade
  • Pointed serrations
  • Even slices
  • No crushing
German 1.4116, Hardened to 56-58 HRC

The Steel

German 1.4116, Hardened to 56-58 HRC

The blade is solid German 1.4116 (X50CrMoV15) — a proven stainless cutlery steel that resists rust and stains, ideal for a knife that meets damp dough and acidic crusts. Vacuum heat treated to 56-58 HRC for a tough, forgiving edge that takes the repeated sawing motion of bread work. This is monosteel, not Damascus and not san-mai — one clean piece of stainless, 2.2mm at the spine.

Red Wood Handle, Safety S-Curve

In the Hand

Red Wood Handle, Safety S-Curve

The handle is shaped from red wood and fixed with stainless steel rivets. A safety S-curve at the blade heel keeps your fingers clear of the serrations and steadies the grip through long sawing strokes. At a balanced 200g, it has enough heft to do the work without fatiguing your wrist on a full loaf.

FAQs

Can you sharpen a serrated bread knife?

Yes, but not like a straight edge — you can't run it over a honing steel or pull-through sharpener. Each serration (gullet) is sharpened individually with a tapered rod or ceramic sharpener that fits the scallops. Because the points carry the work, a serrated edge stays usable far longer between sharpenings than a flat edge.

Why is a serrated edge better for bread?

A straight edge slides on hard crust and then compresses the soft crumb underneath. The pointed serrations grip and saw through the crust first, so the loaf keeps its shape and you get clean, even slices instead of a squashed one.

What steel is this bread knife made from?

Solid German 1.4116 (X50CrMoV15) stainless steel, vacuum heat treated to 56-58 HRC. It's monosteel — one piece of stainless, not Damascus or san-mai — which resists rust and stains well against damp dough and acidic crusts.

How long is the blade?

10.5 inches (215mm), with a 2.2mm spine. The length lets you slice across a wide sourdough or full baguette in one smooth draw rather than several short sawing passes.

Can it cut anything besides bread?

Yes. The same serrations handle soft-skinned jobs a straight edge struggles with — ripe tomatoes, citrus, layer cakes and delicate sponges — without tearing or crushing them.

Is it dishwasher safe?

No. Hand wash only and dry it after use. The red wood handle and the steel both last longer with hand care, and dishwasher heat and detergent will damage the handle.

Is this knife Damascus?

No. This is the Supreme Series — solid German 1.4116 stainless steel, not a Damascus or layered blade. If you want a patterned Damascus bread knife, look at Xinzuo's Damascus ranges instead.
